Chimichurri Mayo
Ingredients:
• 1 cup mayonnaise
• ½ cup cilantro, chopped
• ¼ cup parsley, chopped
• ½ cup basil, chopped
• ⅓ cup olive oil
• 1 red chili (or 1 tsp chili flakes)
• 3 garlic cloves, minced
• 2 shallots, chopped
• 1 tablespoon lemon juice
• ½ teaspoon salt
• ¼ teaspoon coconut sugar
• 1 tablespoon red wine vinegar
Directions:
1. Prepare the Herbs: In a food processor or blender, add the chopped cilantro, parsley, basil, red chili (or chili flakes), minced garlic, and chopped shallots.
2. Blend Ingredients: Pulse until the herbs and vegetables are finely chopped.
3. Add Mayonnaise and Oils: Add the mayonnaise, olive oil, lemon juice, red wine vinegar, salt, and coconut sugar to the mixture.
4. Blend Until Smooth: Blend until the mixture is well combined and creamy. You can adjust the consistency by adding more olive oil if desired.
5. Taste and Adjust: Taste the chimichurri mayo and adjust seasoning if necessary, adding more salt, lemon juice, or red chili for heat.
6. Chill: Transfer the chimichurri mayo to a serving bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld.
7. Serve: Use as a dip, spread on sandwiches, or as a sauce for grilled meats and vegetables. Enjoy!
