Ube Cream Cheese Streusel Muffins
Ingredients:🧁
For the streusel topping:
½ cup all-purpose flour
¼ cup white sugar
¼ cup cold unsalted butter, cubed
¼ tsp salt
For the muffin batter:🧁
2 cups all-purpose flour
1 cup granulated sugar
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 large eggs
½ cup vegetable oil
½ cup milk
1 tsp vanilla extract
½ cup ube halaya (ube jam)
1 tsp ube extract
For the cream cheese filling:🧁
200 g cream cheese, softened
¼ cup sugar
1 tsp vanilla extract
Instructions🧁
1. Make the streusel
In a bowl, combine the flour, sugar, and salt.
Add the cold butter.
Rub the butter into the flour using your fingertips until crumbly.
Refrigerate while preparing the batter.
2. Prepare the cream cheese filling
Beat together the cream cheese, sugar, and vanilla until smooth.
Transfer to a piping bag or spoon into a small bowl.
3. Make the muffin batter
Preheat oven to 375°F (190°C).
Line a 12-cup muffin pan with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk the eggs, oil, milk, vanilla, ube halaya, and ube extract until smooth.
Pour the wet ingredients into the dry ingredients and mix just until combined. Do not overmix.
4. Assemble
Fill each muffin liner halfway with batter.
Add about 1 tablespoon of the cream cheese filling.
Cover with more batter until the cups are about ¾ full.
Sprinkle a generous amount of streusel on top.
5. Bake
Bake for 20–25 minutes, or until a toothpick inserted into the muffin (avoiding the cream cheese center) comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack.
Tips for bakery-style muffins🧁
Bake at 375°F (190°C) for a taller muffin dome.
Don't overmix the batter.
Chill the streusel before using so it stays crumbly.
For extra flavor and color, drizzle cooled muffins with a simple glaze made from 1 cup powdered sugar, 2–3 tablespoons milk, and a few drops of ube extract.
