LUNCH dilemma solved! ✨ Our Honey Garlic Mushroom Chicken is pure bliss. Juicy chicken & earthy mushrooms in a luscious honey garlic sauce, topped with toasted garlic. Seriously delicious! 🤤

Ingredients:
1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
8 oz cremini mushrooms, sliced
2 tbsp olive oil
4 cloves garlic, minced (plus extra for toasted garnish, if desired)
1/4 cup honey
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp cornstarch mixed with 1 tbsp water (slurry)
Salt and pepper to taste
Fresh parsley or chives for garnish
Instructions:
Season chicken with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add sliced mushrooms to the same skillet, cook until softened and browned, about 5 minutes.
Add minced garlic (4 cloves) to the skillet with mushrooms, cook for 1 minute until fragrant.
In a small bowl, whisk together honey, soy sauce, and rice vinegar. Pour over mushrooms and garlic. Bring to a simmer.
Stir in the cornstarch slurry and cook until the sauce thickens.
Return cooked chicken to the skillet, toss to coat everything evenly in the sauce.
Garnish with toasted minced garlic, fresh parsley, or chives. Serve immediately with rice or your favorite side!
