Crispy Bang Bang Salmon Bites

Ingredients:

For the Salmon Bites:
- 1 ½ pounds salmon fillets (skin removed, cut into bite-sized pieces)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional, for extra heat)

For the Bang Bang Sauce:
- ½ cup mayonnaise
- ¼ cup Thai sweet chili sauce
- 1 tablespoon sriracha sauce (adjust for preferred heat level)
- 1 tablespoon honey
- 1 tablespoon lime juice (freshly squeezed)

Optional Garnish:
- Fresh parsley or cilantro, chopped
- Green onions, sliced
- Sesame seeds

Directions:

Step 1: Prep the Salmon
Pat the salmon fillets dry with paper towels to ensure a crispy texture. Remove any skin and cut the salmon into 1-inch bite-sized cubes. Place the salmon pieces in a large bowl. Drizzle with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using). Toss gently to coat the salmon evenly with the seasoning.

Step 2: Make the Bang Bang Sauce
In a small mixing bowl, whisk together the mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth and creamy. Taste and adjust the sauce by adding more sriracha for heat or honey for sweetness. Set aside.

Step 3: Cook the Salmon
Heat a large non-stick skillet over medium-high heat and add a small amount of olive oil to prevent sticking. Once the oil is hot, add the salmon pieces in a single layer, making sure not to overcrowd the pan. Work in batches if needed.

Continue cooking until the salmon is golden brown and crispy on the outside, about 3-4 minutes per side.

Once cooked, remove the salmon bites from the skillet and place them on a serving platter. Drizzle with the Bang Bang sauce and garnish with fresh parsley or cilantro, green onions, and sesame seeds if desired.

Ingredients:

1.5 lbs beef sirloin or flank steak, thinly sliced against the grain

2 tablespoons vegetable oil

1 onion, thinly sliced

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

2–3 tablespoons red curry paste (adjust to desired heat)

1 can (14 oz) coconut milk

1 tablespoon fish sauce

1 tablespoon soy sauce

1 teaspoon brown sugar or palm sugar

Juice of 1 lime

1 red bell pepper, sliced

1 cup broccoli florets

Salt and pepper to taste

Fresh basil or cilantro leaves, for garnish

Crispy fries, homemade or store-bought, for serving

Directions:

Heat oil in a skillet or wok over medium-high heat. Add beef slices and sear quickly until browned but still tender. Remove and set aside.

In the same pan, sauté onion until soft, about 3–4 minutes. Add garlic and ginger and cook for 1 minute until fragrant.

Stir in red curry paste and cook for another 30 seconds to bloom the spices.

Pour in coconut milk, fish sauce, soy sauce, and brown sugar. Stir well and bring to a gentle simmer.

Add bell pepper and broccoli, simmer until vegetables just soften.

Return beef to the pan and gently warm through, stirring in lime juice. Taste and adjust seasoning.

Plate beef curry sauce over fries or serve fries alongside for dipping. Garnish with fresh herbs.

Ingredients:

1/2 cup light sodium soy sauce
1/2 cup lemon juice or lime juice
1/2 cup ketchup
3 tablespoons dark brown sugar
2 tablespoons garlic powder
1 teaspoon ground black pepper
1–2 teaspoons salt
1 can lime soda or Sprite
5 pounds meat of your choice (chicken or pork)

Instructions:

Prepare Marinade: In a large bowl, mix soy sauce, lemon/lime juice, ketchup, brown sugar, garlic powder, pepper, salt, and soda. Stir until the sugar dissolves.

Marinate Meat: Cut meat into bite-sized chunks. Add to marinade, cover, and refrigerate for at least 3 hours (preferably 24 hours for maximum flavor).

Soak Skewers: Soak wooden skewers in water for 30 minutes to prevent burning on the grill.

Preheat Grill: Set your grill to medium heat and lightly oil the grates.

Skewer the Meat: Thread marinated meat pieces onto the skewers with small gaps between each for even cooking.

Grill: Place skewers on the grill. Cook each side for 4–5 minutes, basting occasionally with the warmed leftover marinade until meat is fully cooked and slightly charred.

1/2 cup green onions, chopped
2 cups beef broth
1 cup water
1 cup tomato, diced
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sugar
Salt and pepper to taste
2 eggs, beaten
1 package of noodles, cooked according to package directions

Instructions:

Marinate the beef with 1 tbsp soy sauce and a pinch of salt and pepper for 15 minutes.
Heat the oil in a pot over medium heat. Add the garlic and ginger, and sauté for 30 seconds.
Add the beef and cook until browned on all sides.
Add the tomato, beef broth, water, green onions, soy sauce, rice vinegar, and sugar. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the beef is tender.

- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp rice wine or Shaoxing wine (optional)
- 1 tbsp brown sugar
- 1/2 cup water
- Salt and pepper to taste
- Optional: A few green chilies, sliced for garnish

Instructions:

1. Prepare the chicken feet: Clean the chicken feet thoroughly. You can blanch them briefly in boiling water to remove impurities if desired. Trim any excess skin or nails.

Roasted Orange Chicken
Ingredients:
4 bone-in, skin-on chicken thighs
1 tbsp olive oil
Salt & black pepper, to taste
1 tsp garlic powder
1 tsp paprika
1 orange, sliced
1 tbsp fresh thyme (optional)
Orange Glaze:
½ cup orange juice (fresh)
2 tbsp soy sauce
2 tbsp honey
2 tsp orange zest
1 tsp minced garlic
1 tsp grated ginger
1 tsp cornstarch + 1 tbsp water (slurry)
Instructions:
Preheat oven to 400°F (200°C).
Season chicken: Rub thighs with olive oil, salt, pepper, garlic powder, and paprika.
Sear in an oven-safe skillet, skin-side down, until golden (5–7 minutes). Flip and cook 3 more minutes.
Arrange orange slices around chicken. Transfer skillet to oven and roast for 25–30 minutes until cooked through.
Make glaze: In saucepan, combine orange juice, soy sauce, honey, zest, garlic, and ginger. Simmer 5 minutes. Stir in cornstarch slurry, cook until thickened.
Glaze chicken: Brush over roasted chicken. Broil 2–3 minutes for caramelized finish.
