75-Year-Old Inday Diutay Serves 1,000 Hotcakes in Tibiao, Antique 🥞😋🥞

More than 1,000 hotcakes were served today by 75-year-old Inday Diutay Absalon and her family during a free “eat-all-you-can” local pancake treat in Tibiao.

The well-loved vendor, who has been a familiar face in Tibiao’s marketplace, offered the feast as her birthday gift to her townmates and loyal customers.

Inday Diutay’s story with pancakes began more than four decades ago. “When I was in Grade 1, I already started cooking pancake, helping my mother to sell and earn a living,” she recalled. Since then, pancake-making has become both a livelihood and a passion that she continues to nurture.

Today, her daughter Joan Absalon has joined her in keeping the family trade alive. Together, they serve locals during Tibiao Market days every Tuesday, Thursday, and Saturday.

Her pancakes have also become part of the community’s collective memory. University of Antique Professor George Ulit fondly shared, “My grandmother used to bring me every Saturday to the market and buy me this pancake. It’s a nostalgic experience. I love yellow and pancakes.”

What started as a way to help her mother sustain the family has now become a legacy of service and community spirit. For Inday Diutay, this year’s milestone birthday was not just a celebration of age, but a celebration of gratitude — giving back to the community that has supported her through the years.

Catch of the day: Gingaw 🐟

Gingaw is the Kinaray-a name in Antique and many parts of the Visayas for the Mangrove Red Snapper (Lutjanus argentimaculatus).

Quick Facts:

Scientific name: Lutjanus argentimaculatus

Other common names: Mangrove Jack, Mangrove Red Snapper, Gingaw (Philippines), Lutjan rojo (Spanish).

Habitat: Found in mangroves, estuaries, rivers, and coastal reefs. Juveniles often stay in brackish water, while adults move offshore to coral reefs.

Appearance:
✔️ Reddish to copper-bronze body.
✔️ Large mouth with sharp canine teeth.
✔️ Can grow very large (over 1 meter, 20+ kg).

Importance:
✨️ Highly valued food fish (firm, white meat).
🎣 Popular among anglers for its strong fight.
🌊 Plays a role in both coastal and reef ecosystems.
