26th Dish: Cavite - Adobo Seca

INGREDIENTS:
Pork Liempo - 500g
Salt - pinch
Pepper - pinch
Atsuete - 20g
Vinegar - 1/2 cup
Garlic - 2 bulbs
Red chili - to taste
Bay leaf - 3 pcs

PROCEDURE:
1. Prepare the atsuete. Set aside.
2. Chop garlic and chili. Saute.
3. Add the pork belly. Season with salt and pepper.
4. Add bay leaf.
5. Add the atsuete water.
6. Simmer until tender.
7. Add the vinegar. Simmer until it dries out.
8. Serve with rice.

25th Dish: Laguna - Buko Pie

INGREDIENTS:
PIE DOUGH:
Flour - 2 Cups
Cold butter - 1/2 cup
Salt - 1/4 tsp
Sugar -2 tsp
Gripo stock - 7 tsp

BUKO FILLING:
Evap Milk - 3/4 cup
Sugar - 3/4 cup
Coconut Meat - 3 whole buko
Buko juice - 1/2 cup
Cornstarch - 1/4 cup

EGG WASH:
Egg - 1 whole

PROCEDURE:
1. Prepare the doug by mixing all the ingredients and kneeding. Rest for 30 minutes.
2. Prepare the buko filling. Thicken with buko slurry. Cooldown.
3. Add the dough in the mold.
4. Add the buko filling.
5. Cover with the remaining pie dough.
6. Bake at 180c for 45 minutes.
7. Egg wash and bake for the remaining 10 minutes.
8. Cooldown before cutting and serving.

24th Dish: Rizal - Bibingka

INGREDIENTS:
RICE:
Malagkit Rice - 1 1/2 Cup
Gripo stock - 2 cups
Coconut cream - 1 pack
Sugar - 1/4 cup

COCONUT CUSTARD:
Egg yolks - 2 pcs
Coconut cream - 1 pack
Mascovado sugar - 1/4 cup
Cornstarch - 1/2 Tbsp
Condensed Milk - 1/2 can
Salt - pinch

PROCEDURE:
1. Wag the malagkit rice and cook.
2. In a pan add the egg yolks together with the coconut cream, mascovado sugar, cornstarch, condensed milk and salt.
3. Heat up and mix until thickened. Cooldown
4. In a separate pan add the coconut cream together with the sugar. Dissolve compeltely.
5. Add the rice and stir.
6. Place the rice in a baking pan with banana leaves.
7. Add the coconut custard on top.
8. Bake in the oven for 10 minutes at 200C.
9. Cooldown.
10. Serve
