Ginataang Adobo with Crispy Chicken Skin

Ok yung naging compliment nung crispy chicken skin dun sa nagmamantikang adobo natin with gata. Mas maganda lang siguro na blanch muna yung chicken skin sa susunod para mejo stretch ang itsura nya. All in all ok yung dish, something to put in a menu and siguradong mapapa extra rice ka.

Around The Philippines in 82 Dishes
30th Dish: Camarines Sur - Pancit Bato

INGREDIENTS:
Liempo - 150g
Kikiam - 100g
Squid balls - 100g
Chicken liver - 80g
Hibi - 20g
Soy sauce - 1/4 cup
Garlic - 4 cloves
Onion - 1 whole
Pork stock - 1.5 Liter
Pancit Bato noodles - 1 pack
Cabbage - 80g
Carrots - 1 whole
Shanghai - 2 pcs
Egg - 1 pc
Leeks - garnish
Kalamansi - to taste
Vinegar - to taste
Dinuguan - to taste

PROCEDURE:
1. Pan fry the liempo, set aside (some)
2. Add the kikiam and squid balls. Saute.
3. Add the liver, saute.
4. Add the kaldo (pork stock with soy sauce)
5. Add the garlic and onions. Boil.
6. Add the noodles.
7. Add the vegetables. Simmer.
8. Serve with shanghai, lechon kawali, egg and leeks.
9. Squeeze kalamansi and add vinegar.
10. Serve with dinuguan.
