Pork Pochero — Negros-style! It may look like pork nilaga to folks from Luzon, but ours (nilaga) has jackfruit, tanglad, batwan or sampalok powder, and siling haba. Sarap ’di ba? Kain na! 🍽️

𝐁𝐮𝐥𝐚𝐥𝐨 𝐑𝐞𝐜𝐢𝐩𝐞 𝐩𝐞𝐫𝐟𝐞𝐜𝐭 𝐟𝐨𝐫 𝐛𝐞𝐠𝐢𝐧𝐧𝐞𝐫𝐬!

Ingredients:

1 kg beef shank (with bone marrow)
1 medium onion (quartered)
1 tsp whole black peppercorns
1-2 tbsp fish sauce (optional)
1-2 sweet corn cobs (cut into 3 pieces each)
1 bundle of pechay (or cabbage leaves)
4-5 cups water
Salt to taste
---

Instructions:
1. Prepare the Beef
Wash the beef shank thoroughly to remove impurities.

2. Boil the Meat
In a large pot, add the beef shank and cover with water.
Bring to a boil, then lower the heat. Skim off any scum or impurities that rise to the top.

3. Simmer for Tenderness
Add the onions and peppercorns. Cover and simmer on low heat for 1.5 to 2 hours (or until the meat is tender). Add more water as needed to keep it soupy.

4. Flavor the Broth
Season with fish sauce and salt to taste.

5. Add the Corn
Once the meat is tender, add the corn and simmer for 10-15 minutes.

6. Add the Vegetables
Add pechay or cabbage just before serving. Let it simmer for 2-3 minutes, then turn off the heat.

7. Serve Hot
Serve in a large bowl and enjoy with steamed rice!

Pro Tip:
You can use a pressure cooker to shorten the cooking time for the beef.
