Khatay Meethy Dahi Baray( Dahi Bhallay)
Fresco Style Dahi Baray…
Ingredients..
✅Baray (Bhallay)
• Mash ki daal (Urad dal, dhuli hui) - 3 cups
• Water - as needed (for soaking & grinding)
• Salt - ½ tsp
Zeera powder 1/2 tapn
Ginger 1 inch piece, garlic 3 cloves, green chilli 2
• Oil - for frying
✅For Dahi (Yogurt Mixture)
• Fresh thick yogurt (preferably Fresco-style fresh dahi) - 2 cups
• Sugar - 3-4 tbsp (adjust to taste)
• Salt - ½ tsp
• Red chili powder - ½ tsp
• Roasted cumin powder - 1 tsp
• Chaat masala - 1 tsp
✅For Sweet & Sour Toppings…
• Imli (tamarind) chutney 4 tbspns
• Green chutney -4 tbspns (optional but recommended)
Garnish (Optional but Traditional)
• Red chili powder - a pinch
• Roasted cumin powder - a pinch
• Chaat masala - a pinch
• Fresh coriander - chopped
✅Method
• Prepare the Baray..
1. Wash and soak mash ki daal for 6–8 hours or overnight.
2. Drain completely and grind into a thick, smooth batter using minimal water.
3. Add salt, zeera powder,green chilli ginger and garlic. Beat well until fluffy.
4. Heat oil on medium heat.
5. Drop spoonfuls of batter into oil and fry until golden brown.
6. Remove and immediately soak baray in warm water for 10–15 minutes with 1 tbspn of green chutney and imli pulp
7. Gently squeeze excess water and set aside.
✅Prepare Khatay Meethay Dahi
1.Whisk yogurt until smooth and creamy.
2. Add sugar, salt, red chili powder, roasted cumin, and chaat masala.
3. Taste — it should be mildly sweet, tangy, and spicy.
4. Adjust sugar or salt if needed.
✅Assemble Dahi Baray
1. Arrange baray in a serving dish.
2. Pour prepared yogurt generously over them.
3. Drizzle imli chutney, meethi chutney, and green chutney.
4. Sprinkle chili powder, cumin powder and chaat masala on top
