Lauki Chana Dal
Ingredients:
1 medium-sized bottle gourd (lauki), peeled and cut into cubes
1 cup chana dal (split chickpeas), soaked for at least 30 minutes
1 onion, finely chopped
2 tomatoes, chopped
2 green chilies, chopped (optional)
1 tsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp cumin seeds
1 tsp coriander powder
1 tsp garam masala powder
Salt to taste
2 tbsp oil
Fresh coriander leaves for garnishing
Instructions:
1. Prepare the dal: Drain the soaked chana dal and set it aside.
2. Sauté the base: Heat oil in a pressure cooker or pot. Add cumin seeds, and once they splutter, add the chopped onions. Sauté until they turn golden brown.
3. Add spices: Stir in the ginger-garlic paste and sauté for 1 minute. Then, add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften and the oil begins to separate.
4. Cook the vegetables and dal: Add the lauki (bottle gourd) cubes and soaked chana dal to the pot. Mix everything well. Add 2 cups of water, stir, and close the pressure cooker lid. Cook for 2-3 whistles or until the dal and lauki are tender.
5. Final touches: Open the lid, check if the dal and lauki are cooked. If there's extra water, cook for a few more minutes without the lid to thicken the curry.
6. Garnish: Add garam masala and fresh coriander leaves before serving.
Serve hot with sunridge roti or rice!
