Scotch Eggs Recipe

Ingredients :

Eggs – 6 large (4 boiled, 2 raw for coating)
Sausage meat or minced chicken/beef – 500g
Breadcrumbs – 1½ cups (150g)
All-purpose flour – ½ cup (65g)
Salt – ½ tsp
Black pepper – ½ tsp
Paprika or chili powder – ½ tsp (optional, for spice)
Oil – for deep frying

Instructions :

Boil 4 eggs for about 6–7 minutes, cool them in cold water, peel, and set aside.
Season the sausage meat with salt, pepper, and paprika, then divide into 4 portions.
Flatten each portion of meat in your hand, place a boiled egg in the center, and wrap the meat around it until fully sealed.
Roll each wrapped egg lightly in flour, dip into the beaten raw eggs, then coat with breadcrumbs.
Heat oil in a deep pan and fry the coated eggs on medium heat until golden brown and crispy (about 6–8 minutes).
Drain on paper towels and serve warm with sauce or as a snack.

Chicken Tikka Recipe

Ingredients:

For Marination:
Boneless chicken – 500 g (cubes)
Thick curd (hung curd preferred) – ½ cup
Ginger garlic paste – 1 tbsp
Kashmiri red chilli powder – 1 tbsp
Turmeric powder – ½ tsp
Garam masala – 1 tsp
Coriander powder – 1 tsp
Cumin powder – 1 tsp
Lemon juice – 1 tbsp
Mustard oil – 1 tbsp
Salt – to taste
Orange-red food color – optional

Method:

1. Prepare the marinade:
In a bowl, whisk the curd. Add all the spices, lemon juice, mustard oil, and food color. Mix well.

2. Marinate the chicken:
Add chicken cubes and coat them well in the marinade. Cover and refrigerate for at least 4 hours (overnight for best results).

3. Cook the chicken:

Oven method: Preheat the oven to 200°C. Line a tray with foil and place chicken pieces on skewers or directly on the rack. Bake for 20–25 minutes or until charred slightly. Flip halfway through.

Pan method: Heat a grill pan or tawa. Add a little oil and cook the marinated chicken on medium-high heat, flipping till evenly charred and cooked through.

Tandoor/air fryer: Works perfectly too! Air fry at 200°C for 12–15 minutes.

4. Smoke it (optional but recommended):
Place a small bowl with hot charcoal in the center of the cooked chicken. Pour a drop of ghee or oil over the coal and cover for 2 minutes to infuse a smoky flavor.

5. Serve hot with mint chutney, onion rings, and lemon wedges.

Kalmi Kebab | Chicken Tandoori

Ingredients
Chicken leg pieces – 3 (around 500 gms)

First Marination:

Salt – ½ tsp
Lemon juice – 1 tbsp
Red chilli powder – ½ tsp

Second Marination:

Mustard oil – 1 tbsp
Curd – 3 tbsp
Ginger garlic paste – 1 tbsp
Kasurii methi (dry fenugreek leaves) – 1 tbsp, crushed
Mint leaves – 10, finely minced
Coriander leaves – 2 stalks, finely minced
Kashmiri red chilli powder – 1 ½ tsp (for color)
Coriander powder – 2 tsp
Garam masala – ½ tsp
Cumin powder – ½ tsp
Salt – ½ tsp (adjust as needed)

Method:

1. Wash chicken, pat dry, and make slits.

2. Marinate with salt, lemon juice & chilli powder → rest 15 mins.

3. Prepare 2nd marination: curd, mustard oil, ginger-garlic, kasuri methi, mint, coriander leaves, Kashmiri chilli, coriander, garam masala, cumin & salt.
4. Coat chicken well, cover & refrigerate overnight.
5. Next day, bring to room temp (30 mins).
6. Preheat oven at 200°C. Bake chicken 20 mins, then grill 15 mins, flip & bake 10 mins till charred.
7. Brush with melted butter, wrap leg ends in foil.
8. Garnish with onion rings, lemon wedges & coriander. Serve hot.

🍢 Pan Baked Kababs –

Ingredients:
• 1 kg mince (qeema)
• 1 onion & 1 tomato (chopped)
• Green chilli, coriander & mint (chopped)
• ½ tbsp garlic paste
• 1 tbsp salt (or to taste)
• 2 tsp each: coriander powder, cumin powder, garam masala, crushed chilli, paprika, black pepper, ginger garlic paste

Instructions:
1. Mix all ingredients well.
2. Shape into kababs.
3. Bake for 20 mins, then grill for 5 mins.
4. Serve with salad, rice, or wrap.

Here is the Bread Samosa Recipe in both English and Hindi:



🥪 BREAD SAMOSA RECIPE

Crispy, stuffed bread triangles made without traditional samosa dough.

🔸 Ingredients (Content):

Bread slices – 6
Bread slice - 6

Boiled potatoes – 2 (mashed)
Boiled Potatoes - 2 (Mashed)

Green peas – 1/4 cup (boiled)
Green peas - 1/4 cup (boiled)

Green chili – 1 (finely chopped)
Green Chilli - 1 (Thinly Chopped)

Ginger – 1/2 tsp (grated)
Ginger - 1/2 teaspoon (pumpkin pumpkin)

Red chili powder – 1/2 tsp
Red pepper powder - 1/2 teaspoon

Garam masala – 1/2 tsp
Garam Masala - 1/2 teaspoon

Amchur (dry mango powder) – 1/2 tsp
Amchur powder - 1/2 teaspoon

Coriander leaves – 2 tbsp (chopped)
Green coriander - 2 large spoons (chopped)

Salt – to taste
Salt - to taste

Water – for sealing edges
Water - to stick to the edge

Oil – for deep frying
Oil - for frying



🔸 Instructions (Method):

1. Prepare the Stuffing (Prepare the Stuffing):
Heat 1 tsp oil in a pan. Add ginger, green chili, mashed potatoes, peas, red chili, garam masala, amchur, salt, and coriander. Mix well. Let it cool.
Heat 1 teaspoon of oil in a pan. Add ginger, green peppers, masle potatoes, peas, spices, salt and coriander. Mix well and let it cool.

2. Prepare Bread (Prepare Bread):
Trim the edges of bread slices. Flatten each slice using a rolling pin.
Cut the edge of bread and take thin vine from ballon.

3. Stuff and Fold (Fill and Fold):
Cut each flattened slice diagonally into two triangles. Wet the edges with water. Place stuffing in the center and seal tightly to form a triangle samosa.
Cut every slice of thirst. Water the edges, fill the middle and stick the edges well.

4. Fry (तलें):
Heat oil in a deep pan. Fry the bread samosas until golden and crisp on medium flame.

Green chutney or tomato ketchup

Eggless Red Velvet Cookies

📌INGREDIENTS
* 1⅓ Cup (160g) all-purpose flour
* 3 tablespoon (15g) cocoa powder
* 1 tablespoon (7g) cornstarch
* ½ teaspoon baking soda
* ¼ teaspoon salt
* ½ Cup (114g) butter (softened to room temperature)
* ½ Cup (100g) brown sugar
* ¼ Cup (50g) granulated sugar
* 2 teaspoon pure vanilla extract
* 2 teaspoon red gel food color
* 3 tablespoon (45ml) milk
* 1 teaspoon white vinegar
* ½ Cup white chocolate chips

📌INSTRUCTIONS
1. Sift together flour, cocoa powder, corn starch, baking soda, and salt, whisk well. Set aside.
2. Using a stand mixer with the paddle attachment or with a hand-held mixer beat the butter for a minute.
Add brown sugar and granulated sugar and beat for 2-3 minutes. The mixture should be light, fluffy, and creamy. Scrap the bowl from the bottom in between for even mixing.
3. Now add vanilla extract, food color, and milk, mix well on medium speed until food color is distributed evenly. Add white vinegar and mix for few seconds.
4. Add flour mixture gradually into the butter mixture and on the low-speed mix until a soft dough is formed. Add white chocolate chips and mix at low speed until just combined. The dough will be sticky.
5. Cover the dough tightly with plastic wrap and place in the fridge for at least 30 minutes.
6. Preheat oven to 350° F. Line baking sheet with parchment paper or a silicone mat.
7. Scoop 1 & ½ tablespoon of dough, roll into a ball, flatten it very slightly, and place it on the baking sheet. Repeat with the reaming dough and keep enough space between cookie balls.
8. Stick some more chocolate chips on the top of cookie balls if you want to. Bake the cookies for 10-12 minutes.
9. Remove the tray from the oven and let the cookies cool down on the baking sheet for 3 minutes. Transfer the red velvet cookies to a cooling rack and let them cool completely before serving and storing.

Red Velvet Brownies

INGREDIENTS
* 250 g granulated sugar
* 3 large eggs room temperature
* 75 g semi-sweet dark chocolate chips
* 110 g vegetable oil canola or vegetable
* 2 teaspoon red gel food coloring
* 1 teaspoon white vinegar
* 1 ½ teaspoon vanilla extract
* 95 g all-purpose flour
* 15 g unsweetened Dutch cocoa powder
* 1 tablespoon cornstarch
* ½ teaspoon salt
* 50 g white chocolate melted

INSTRUCTIONS
1. Preheat the oven to 160ºC /325ºF conventional oven. Prepare a 20x20 cm (8x8 inch) square pan with parchment paper.
2. Melt the dark chocolate and let it cool slightly while preparing the rest of the ingredients.
3. In a bowl, sift together the all-purpose flour, cocoa powder, cornstarch, and salt.
4. In a separate large bowl, with an electric hand mixer, whisk together the eggs and granulated sugar, for 2 minutes until light and fluffy.
5. Add the melted chocolate, vegetable oil, white vinegar, red paste food coloring and vanilla extract into the batter and mix until combined.
6. Add the dry ingredients to the batter and on medium speed mix it together until combined. Scrape down the sides of the bowl with a spatula to make sure everything has been incorporated.
7. Pour the brownie batter into the prepared baking pan, smooth it out with the spatula. Bake the brownie in the preheated oven for 40-45 minutes.
8. Once baked, let it cool down on a cooling rack. Once cooled down completely, remove the brownie from the pan and place it on a serving dish. Melt the white chocolate and drizzle it over the brownie. Serve once the chocolate has set.

📌INGREDIENTS
✅For the Cookies:
* 2 ¼ cups all-purpose flour
* ¼ cup unsweetened cocoa powder
* 1 teaspoon baking soda
* ½ teaspoon salt
* 1 cup unsalted butter softened
* 1 ½ cups granulated sugar
* 2 large eggs
* 2 teaspoons vanilla extract
* 1 tablespoon buttermilk
* 2 tablespoons red food coloring
✅For the Cream Cheese Frosting:
* 8 oz cream cheese softened
* ¼ cup unsalted butter softened
* 2 cups powdered sugar
* 1 teaspoon vanilla extract

📌INSTRUCTIONS
1. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
2. In a large bowl or stand mixer, cream together the butter and sugar until light and fluffy, about 3-4 minutes.
3. Beat in the eggs one at a time, then add the vanilla extract, buttermilk, and red food coloring. Mix until well combined.
4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
5. Cover the dough with plastic wrap and refrigerate for at least 2 hours or overnight.
6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
7. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
8. Bake for 10-12 minutes, until the edges are set but the centers are still soft.
9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
10. While the cookies are cooling, prepare the frosting. Beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
11. Once the cookies are completely cool, frost them using a piping bag or spread the frosting with a knife.
