Eid Mubarak meri sab shahzadiyon ko ….. Method
1. First Fry the Meat
Heat oil/ghee in cooker or pot.
Add:
• cumin
• whole black pepper
Then add meat and fry well on high flame until color changes and light golden spots appear.
Now add ginger garlic paste and fry 2–3 minutes more.

2. Add Yogurt
Lower the flame and add whisked yogurt slowly.
Keep stirring continuously so yogurt doesn’t split.
Cook until:
• yogurt water dries
• oil starts separating
This step gives the rich desi taste.

3. Add Water & Pressure Cook
Add:
• salt
• crushed black pepper
• green chilies
Then add about:
• 1½ to 2 cups water
Close cooker and cook:
• Mutton: 6–8 whistles
• Beef: 10–12 whistles

4. Dry It
Open cooker after pressure releases.
Cook on high flame until water fully dries and oil comes out nicely.
Lightly roast/fry the meat in remaining masala for that restaurant-style finish.
