Karachi Style (Meethe Dahi Bhalle)

Ingredients:
-1 cup mash dal
-½ cup moong dal
-1 tsp salt
-1 tsp chili flakes
-1 tsp cumin powder
-1 tsp baking powder

Method:
-Wash and soak both dals for at least 5 hours, then drain and blend with a little water into a thick paste.
-Add salt, chili flakes, cumin powder, and baking powder, and whisk until light and fluffy.
-Test the batter by dropping a small portion in water it’s ready if it floats.
-Heat oil over low to medium flame and drop 1 tablespoon of batter per piece.
-Fry until golden brown on both sides.
-You can freeze the bhallas in a zip-lock bag for at least 1 month.
-To serve, soak in hot water for 10 minutes, press gently to remove excess water, and remove any extra water before using.

Yog Mixture:
-1 kg yoghurt
-1 pack cream
-2 tbsp sugar (adjust as needed)
-½ tsp chili flakes
-½ tsp chaat masala
-½ tsp salt
-Milk (optional, to adjust consistency)

Method:
-In a bowl,Combine yoghurt, cream, sugar, chili flakes, chaat masala, and salt.
-Mix well until smooth.
-If too thick, add milk to adjust the consistency.
-Place the bhallas in a serving dish and pour the yoghurt mixture over them.
-Sprinkle chaat masala and chili flakes on top.
-Chill in the fridge before serving and enjoy.

Chocolate Cupcakes

Ingredients:
1cup (120 g) flour
⅓ cup (40 g) cornflour
¼ tsp (1.5 g) salt
½ tsp (3 g) baking soda
1 cup (200 g) sugar
½ cup (120 ml) buttermilk (½ cup milk + 1 tsp vinegar, rest 5–10 mins)
⅓ cup (80 ml) oil
1 large (55–60 g) egg
1 tsp (5 ml) vanilla extract

Method:
-Preheat oven to 180°C.
-In one bowl, mix all dry ingredients.
-In another, whisk wet ingredients.
-Combine both; mix gently until smooth.
-Fill liners ¾ full and bake for 18–20 min or until a toothpick comes out clean.
-Cool completely before frosting.

Chocolate Frosting:
1 cup (180 g) dark chocolate
1 cup (240 ml) whipping cream
Melt together, cool, beat until stiff, and pipe on cupcakes.
