Turkish Pide
Turkish boat-shaped flatbread with savory toppings.
Ingredients
Dough
* 3 cups all-purpose flour
* 1 tsp yeast
* 1 tsp sugar
* 1 tsp salt
* 1 cup warm water
* 2 tbsp olive oil
Topping
* Cheese
* Minced meat
* Vegetables
* Egg (optional)
Method
1. Mix flour, yeast, sugar, and salt.
2. Add warm water and olive oil.
3. Knead into soft dough.
4. Rest until doubled.
5. Roll into oval shape.
6. Add toppings in center.
7. Fold edges to create boat shape.
8. Bake at high heat until golden.
Yufka
Thin Turkish flatbread similar to lavash.
Ingredients
* 2 cups flour
* ½ tsp salt
* ¾ cup warm water
Method
1. Mix flour and salt.
2. Add warm water gradually.
3. Knead smooth elastic dough.
4. Rest 20 minutes.
5. Roll very thin.
6. Cook quickly on hot griddle.
Gozleme
Turkish stuffed flatbread cooked on griddle.
Ingredients
Dough
* 2 cups flour
* ½ tsp salt
* ¾ cup warm water
* 1 tbsp olive oil
Filling
* Spinach
* Cheese
* Potato
* Minced meat
Method
1. Mix dough ingredients and knead smooth.
2. Rest 20–30 minutes.
3. Roll dough thinly.
4. Add filling on one side.
5. Fold over and seal edges.
6. Cook on hot griddle until golden spots appear.
7. Brush with butter.
Tips
* Roll yufka very thin for authentic texture.
* High heat creates better pide crust.
* Gozleme fillings should not be watery.
* Brush flatbreads with butter after cooking for softness.
