Made beef stroganoff tonight and it only came out to $9.42 for 6 people 😭
Egg noodles (2 packs) - $1.89 each
Cream of mushroom - .50¢ (had one already)
Gravy mix (2 packs) - .30¢ each
Ground beef - $4.54
Super cheap and actually tasted really good. Definitely adding this to the rotation.

Air Fryer Sealed Cheese Sandwiches
Super cheap and easy. I just used whatever cheese I had in the fridge.
Brushed the tops with a little melted butter mixed with Worcestershire sauce and everything bagel seasoning. Sealed them up good, then air fried at 350° for 9 minutes, flipping halfway.
Came out nice and crispy. We ate them with some watermelon and a quick salad on the side.
Haven’t tried them in the oven yet, but I’d probably just follow whatever the package says for whatever bread/sandwich you’re using and check a couple minutes early.

Chicken Pot Pie Casserole
Mixed a couple recipes I saw and made this my own… and it’s actually SO good.
What you need:

1 can cream of chicken soup
1 can cream of mushroom soup
1 can cooked cubed chicken
1 bag frozen mixed veggies
Salt & pepper
4½ flaky Pillsbury biscuits
½ cup melted butter

How to make it:
Preheat oven to 350°.
Cook the biscuits for about 8 minutes (just halfway done).
In a casserole dish, mix together both soups, the chicken, and the frozen veggies. Season with salt and pepper.
Tear the half-cooked biscuits into pieces and scatter them over the top. Pour the melted butter all over the biscuits.
Bake for 25 minutes until everything is bubbly and the biscuits are golden.
Came out really comforting. Definitely making this again.

Bacon Egg & Cheese Biscuit Sandwiches (Freezer Meal Prep)
Made 16 of these so I have breakfast ready for the next 2 weeks. Super easy and actually tastes really good reheated.
What you need:

Biscuits
Bacon
14 eggs
1/3 cup milk
Salt & pepper
Shredded or sliced cheese
Wax paper + gallon freezer bags

How to make it:
For the eggs, whisk together 14 eggs, 1/3 cup milk, salt and pepper. Spray a sheet pan (or casserole dish with raised edges) with olive oil, pour the eggs in, and bake at 350° for about 15 minutes. Time might change a little depending on your pan size.
Cook your bacon however you like. Split the biscuits and layer bacon, egg, and cheese on each one.
Wrap every sandwich individually in wax paper, then put them in gallon freezer bags and freeze.
In the morning, just grab one, microwave for 1 minute on defrost, flip it, then another minute on high. Comes out perfect.
Honestly so worth doing if you’re tired of rushing in the mornings.

Dorito Chicken Casserole 🔥
This one’s stupid good and stupid easy. My whole family goes crazy for it.
What you need:

Cooked shredded chicken (I used rotisserie)
Crushed Doritos (I actually used more than the picture shows lol)
2 cans Cream of Chicken soup
3/4 cup milk
Shredded cheddar cheese (as much or as little as you want)

How to make it:
Preheat your oven to 350°.
Mix the 2 cans of soup with the milk in a bowl.
Spray a 9x13 casserole dish. Now just layer everything:
Start with crushed Doritos on the bottom, then chicken, then the soup mixture, then cheese. I did about 3 layers of each. Finish with a good layer of crushed Doritos on top.
Bake for 20-25 minutes until everything is hot and bubbly and the cheese is melted.
That’s it. Super cheap, super comforting, and always a hit.

Pineapple Chicken Rice Bowl 🍍
This one’s actually so good and looks way fancier than it is.
What you need:

1 whole pineapple
3 tbsp brown sugar
3 garlic cloves, minced
1/3 cup soy sauce
2 tbsp pineapple juice (from the pineapple)
Chicken (I used thighs)
2 tsp cornstarch + 2 tsp water
Rice (white or brown)
Butter + salt
Asparagus
Little oil + salt

How to make it:
Cut the pineapple in half and scoop out the inside. Save some of the juice.
In a small bowl, mix the brown sugar, minced garlic, soy sauce, and pineapple juice.
Season your chicken and cook it however you like, then chop it up. Pour the sauce over the chicken, bring it to a simmer. Mix the cornstarch with water and pour it in to thicken the sauce.
Make your rice and mix in a little butter and salt while it’s hot.
Spoon rice and chicken into the pineapple halves.
For the asparagus, just cut the ends off, toss with a little oil and salt, and roast at 425°F until it’s done.
Super easy and tastes bomb.

Yesterday I asked y’all for ideas for cabbage soup… and this morning I woke up and just went for it 😅

Used veggie broth (that’s all I had), a bag of frozen mixed vegetables, chopped potatoes, celery, onions, 2 cans of stewed tomatoes, tomato paste, beef bouillon cubes, spices… and of course cabbage.

I also had some leftover steak so I threw that in too.

Let it all simmer together and honestly it turned out way better than I expected.

Even my 1.5 year old approved — two bites in and she goes, “mmm mommy that’s good” 🤗

That’s a win in my book 😋

Boiled egg, bacon, your choice of cheese, lettuce or spinach, and then just salt, pepper, or whatever seasoning you like.

A friend shared this with me this morning and honestly it’s one of those simple combos that just works every time 😋

Homemade Crab Rangoon 🥟😋

Creamy imitation crab and cream cheese wrapped in crispy wonton… honestly one of the best party snacks and not even expensive to make.

You need a pack of wonton wrappers, 8oz imitation crab, 8oz cream cheese, salt, pepper, and oil for frying.

I chop the crab up, mix it with softened cream cheese, salt, and pepper until it’s all combined.

Then I put a spoonful in each wonton wrapper, fold and seal the corners tightly so nothing leaks out while frying.

Fry them in hot oil (around 350°F) until golden and crispy.

They’re good on their own but I usually dip them in sweet chili sauce or a mix of sriracha and honey. So good 😍
