FΔƒrΔƒ socatΔƒ, nu e varΔƒ! πŸ‡·πŸ‡΄πŸŒΌ

Socată is a traditional Romanian fermented elderflower drink made with fresh elderflowers, lemons, sugar, and water.

Ingredients:
* 10–15 fresh elderflower heads (shake out any insects, don’t wash unless necessary)
* 1 large lemon, sliced into thin rounds
* 1 cup (200 g) sugar (or up to 1Β½ cups if you like it sweeter)
* About 3 liters (12–13 cups) of water
* Optional: ΒΌ teaspoon active dry yeast (only if your home is cool or you want to speed up fermentation)

1. Place the elderflowers and sliced lemon in a large glass jar or food-safe container.
2. Add the sugar.
3. Pour in the water and stir until the sugar dissolves.
4. Cover the container with a clean cloth or a loose-fitting lid (don’t seal it tightly).
5. Leave it at room temperature for 2–4 days, stirring once or twice a day.
6. Taste it daily. When it’s lightly fizzy and has a pleasant sweet-tart flavor, strain it into bottles.
7. Refrigerate immediately. It will continue to become more fizzy in the fridge, so don’t overfill bottles and open them carefully.

As a Romanian, I can’t lie, kind of find myself rooting for Bosnia and Herzegovina to win the World Cup. πŸ‡§πŸ‡¦πŸ€­

From our qualifying campaign, Bosnia and Herzegovina were the team that beat us twice, and if you’re going to be knocked out along the way, there’s a certain comfort in knowing it was by a team strong enough to go all the way to becoming world champions.
