📝 Ingredients :

8–10 dried red chilies (soaked 15 mins in hot water)

4–5 fresh red chilies (adjust spice level)

6–8 garlic cloves

1 small onion (chopped)

1 tsp smoked paprika

1 tsp chili flakes (optional)

1½ tsp salt (adjust to taste)

½ tsp black pepper

1 tsp oregano

2 tbsp vinegar

2 tbsp lemon juice

1 tsp sugar

¼ cup olive oil

1 tbsp water (if needed to blend)

👩‍🍳 How to Make:

1. Blend soaked dried chilies, fresh chilies, garlic, onion, and all other ingredients except oil.

2. While blending, drizzle in olive oil until smooth and creamy.

3. Taste and adjust salt, lemon juice, or heat.

4. Store in the fridge in a clean jar for up to 10 days.

🔥🍗 Peri Peri Chicken with Homemade Peri Peri Sauce

🍗 For Chicken Marinade:

4 whole chicken thigh pieces ( make cuts )

½ tsp salt

½ tsp black pepper

1 tbsp lemon juice

4-5 tbsp homemade Peri Peri sauce (recipe below)

⏱️ Marinate for at least 2–3 hours or overnight for best flavor.

🌶️ Homemade Peri Peri Sauce:

Ingredients:

3–4 dried red chilies (soaked in warm water for 10 mins)

4 cloves garlic

1 small red bell pepper (roasted or raw, chopped)

2 tbsp lemon juice

2 tbsp white vinegar

¼ tsp black pepper

¼ tsp white pepper

½ tsp smoked paprika or regular paprika

½ tsp salt

3 tbsp olive oil

🔄 Method:

1. Blend everything into a smooth paste.

2. Taste and adjust spice, salt, and lemon to your liking.

3. Store in a jar in the fridge for up to a week.

1. After marinating, heat grill pan or BBQ grill (or oven at 200°C).

Ingredients:

3 medium boiled potatoes, grated

½ cup breadcrumbs

½ tsp salt (or to taste)

½ tsp chili flakes

¼ tsp black pepper

¼ tsp white pepper

Optional: 2 tbsp grated cheese (for extra flavor)

Oil for deep frying

🔪 Instructions:

1. Prepare the Dough:
In a bowl, mix grated potatoes, salt, chili flakes, black pepper, white pepper, and breadcrumbs. Combine well to form a smooth dough. Add cheese if using.

2. Roll & Cut Rings:
Roll out the dough on a flat surface (not too thin).
Use a large cookie cutter or bowl lid to cut big circles, then a small bottle cap or cutter to cut the center hole – forming rings.

3. Chill (Optional but helps):
Refrigerate for 10–15 minutes to help them hold shape during frying.

4. Fry Deep fry in medium-hot oil until golden and crispy. Avoid overcrowding the pan.

2 cups all-purpose flour (maida)

2 tbsp semolina (sooji) – for extra crunch

2 tbsp oil or ghee (for moyan)

Salt to taste

½ tsp carom seeds (ajwain)

Water (to knead)

Oil (for frying)

🔥 How to Make:

1. In a bowl, mix flour, semolina, salt, ajwain, and oil/ghee.

2. Rub with hands until the mixture is crumbly.

3. Add water gradually and knead into a firm dough.

4. Let it rest for 15–20 minutes.

5. Roll out the dough (not too thin), cut into diamond or square shapes.

6. Fry on medium flame until golden and crispy.

7. Cool completely and store in an airtight jar!

3 medium boiled potatoes (mashed)

2 slices of bread (soaked & squeezed)

1 green chili (chopped)

2 tbsp coriander (chopped)

Salt & red chili flakes to taste

½ tsp cumin seeds (optional)

1 egg (beaten)

Breadcrumbs (as needed)

Oil for frying

🔥 How to Make:

1. Soak 2 bread slices in water for a few seconds, then squeeze and crumble them into the mashed potatoes.

2. Add green chili, coriander, cumin, salt & chili flakes. Mix well.

3. Shape the mixture into small roll-sized kababs.

4. Dip each roll in beaten egg, then coat with breadcrumbs.

5. Fry until golden and crispy.

6. Serve hot with ketchup or mint chutney!

1 boiled carrot (grated)

Finely chopped spring onion

1–2 green chilies (chopped)

½ tsp cumin seeds

½ tsp red chili flakes

Salt to taste

Cheese cubes/slices for filling

Egg & breadcrumbs for coating

🔥 How to Make:

1. In a bowl, mix mashed potatoes, carrot, spring onion, green chili, cumin seeds, red chili flakes, and salt.

2. Take a small portion of the mixture, flatten it, place a piece of cheese in the center, and shape into kababs.

3. Dip each kabab in beaten egg, then coat with breadcrumbs.

4. Fry in hot oil until golden brown and crispy.

📝 Ingredients:

500g minced meat (beef or mutton)

2 large onions (thinly sliced)

2 tomatoes (chopped)

2 tbsp yogurt

2 tbsp oil or ghee

1 tbsp ginger garlic paste

2-3 green chilies (slit)

½ tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

½ tsp cumin powder

1 tsp garam masala

Salt to taste

Fresh coriander & mint leaves (chopped)

1 tbsp lemon juice

1 piece coal (for smoking)

👨‍🍳 Instructions:

1. Fry onions until golden brown and remove half for garnish.

2. In the same pot, add ginger garlic paste and sauté for a minute.

3. Add keema and cook till color changes.

4. Add tomatoes, yogurt, spices (turmeric, red chili, coriander, cumin, salt), and green chilies. Mix well.

5. Cook on medium flame until oil separates.

6. Lower the flame, add fried onions (reserve some), fresh coriander, mint, and lemon juice.

7. Place a small bowl or foil in the center, heat coal and place inside, pour oil or ghee over it, and cover immediately. Let it smoke for 5 minutes.

8. Cover tightly and give dum on low flame for 15-20 mins.

9. Garnish with remaining fried onions and coriander.

½ tsp ajwain (carom seeds)

½ tsp roasted cumin powder

½ tsp garam masala

Salt to taste

1 tsp oil (for dough)

Warm water (as needed)

Ghee or oil (for cooking)

👩‍🍳 How to Make:

1️⃣ Prep the Dough:
In a large bowl, mix flour, grated potatoes, green onions, chilies, spices, salt, and 1 tsp oil. Combine well with fingers.

2️⃣ Knead:
Add warm water slowly (if needed) and knead into a soft dough. Let rest for 15–20 mins.

3️⃣ Roll:
Divide dough into balls, dust with flour, and roll into medium-thick parathas.

4️⃣ Cook:
Heat tawa. Cook paratha till bubbles appear, flip, apply ghee/oil, and cook both sides till golden brown.

5️⃣ Serve Hot:
Pair with dahi, achaar, or chai — a pure desi breakfast bliss! 🫶

🌮 Qeema Paratha Recipe | Step-by-Step 🌮

🟢 Ingredients

For Dough:

2 cups wheat flour

1 tbsp oil

Salt to taste

Water as needed (for kneading)

For Qeema Filling:

250g minced meat (beef/chicken/mutton)

1 onion (finely chopped)

2 green chilies (finely chopped)

1 tsp ginger garlic paste

1/2 tsp red chili powder

1/2 tsp turmeric

1/2 tsp cumin seeds

1/2 tsp garam masala

Salt to taste

2 tbsp fresh coriander (chopped)

1 tbsp oil

🔥 Step-by-Step Recipe

Step 1: Prepare Dough
In a bowl, mix flour, salt, oil, and water to knead a soft dough. Cover and rest for 20 minutes.

Step 2: Cook the Qeema Filling
Heat 1 tbsp oil in a pan. Add cumin seeds, then sauté onion and green chilies. Add ginger garlic paste and cook until fragrant.
Add minced meat, red chili, turmeric, and salt. Cook until water dries.
Sprinkle garam masala and fresh coriander. Let it cool completely.

Step 3: Roll & Fill
Take a ball of dough, roll it into a small disc. Place 2 tbsp qeema in the center.
Fold the edges over the filling and seal it. Carefully roll again into a thick paratha.

Step 4: Cook Paratha
Heat a tawa (griddle). Place the stuffed paratha and cook on medium flame.
Apply ghee or oil on both sides and cook until golden brown and crispy.

Step 5: Serve Hot
