Crunchy Pasta Salad
Ingredients
Salad:
β’ Romaine lettuce, roughly chopped
β’ Red onion, finely diced
β’ Cherry tomatoes, quartered
β’ Parsley, roughly chopped
Crunchy Pasta:
β’ Shell pasta
β’ Olive oil
β’ Parmesan, finely grated
Garlic Oil:
β’ Garlic cloves, pressed
β’ Olive oil
Dressing:
β’ Yogurt
β’ Sour cream
β’ Mustard
β’ Lemon juice
β’ Onion powder
β’ Olive oil
β’ Salt
β’ Pepper

Preparation
1. Cook the shell pasta in salted water until al dente, then drain well.
2. While still warm, mix the pasta with olive oil and plenty of Parmesan.
3. Roast the pasta in an air fryer at 200Β°C until golden brown and crispy.
4. For the garlic oil, mix pressed garlic with plenty of olive oil.
5. Toss the crispy pasta with the garlic oil.
6. Mix yogurt, sour cream, mustard, lemon juice, onion powder, olive oil, salt, and pepper to make a dressing.
7. Combine the salad ingredients with the dressing.
8. Add the crunchy pasta on top or mix it in before serving.
