Tucked inside the former Supreme Court at the National Gallery, Gilmore & Damian DāSilva is a cosy space steeped in heritage and story. And the story starts with Chef Damian and his family. Did you know Chefās grandfather, Gilmore DāSilva was the former Supreme Courtās first and only custodian?
Share plates of Eurasian and Singapore dishes like the Cow Dang, named after how it looks but it's really a Kristang heritage dish of stewed prawns. The Ambiler Kacang is not your usual stir-fried long beans; it's cooked with salted fish and a house-made tamarind, just like how Grandpa Gilmore would have done it.
Other must-trys include Teochew Ngoh Hiang with flavours deepened with pork liver (not everywhere serves it this way), the nourishing Chicken Soup in Coconut, and of course, the Christmas Debal, traditionally made with Christmas leftovers. For desserts, Chef Damian makes the best Eurasian Sugee cake and kuih kuihs!
