Salt and black pepper, to taste 🧂
1-2 tbsp oil (for pan-frying or grilling) 🛢️
For the Noodles:
200g (7 oz) fresh or instant thick noodles (like udon or ramen) 🍜
2-3 tbsp soy sauce 🍜
1 tbsp oyster sauce 🦪
1 tbsp dark soy sauce (for color, optional) 🌑
1 tbsp sugar or honey (optional, for sweetness) 🍯
1-2 cloves garlic, minced 🧄
1 green onion, chopped 🧅
1 tsp sesame oil (optional, for extra flavor) 🧴
1 tbsp vegetable oil (for stir-frying) 🛢️
Instructions:
Step 1: Prepare the Meat
Season the Meat:
Season the pork belly or pork shoulder with salt and black pepper.
Cook the Meat:
Heat a pan over medium-high heat and add oil. Once the pan is hot, add the pork pieces and cook for about 3-4 minutes per side until browned and crispy on the outside. Remove from the pan and set aside.
Step 2: Prepare the Noodles
Cook the Noodles:
If using fresh noodles, cook them according to the package instructions, drain, and set aside.
Make the Sauce:
In a bowl, mix together the soy sauce, oyster sauce, dark soy sauce (optional), and sugar or honey. Adjust the seasoning to your liking.
Stir-Fry the Noodles:
In the same pan used for the pork, add a bit more oil if needed and stir-fry the minced garlic until fragrant.
Add the cooked noodles to the pan and pour in the sauce mixture. Stir well to coat the noodles evenly.
Add chopped green onions and a drizzle of sesame oil for extra flavor, then stir-fry until the noodles are hot and the sauce is evenly distributed.
Step 3: Combine and Serve
Assemble the Dish:
Plate the stir-fried noodles and top with the cooked pork pieces.
Garnish:
Sprinkle with extra green onions or sesame seeds if desired, and serve hot.
This dish is a perfect balance of savory, sweet, and aromatic flavors. Enjoy the crispy pork with the tender noodles, and savor the rich, umami-packed sauce! 🍽️😋
