For its first major menu update of 2026, the restaurant introduces 23 new dishes by Chef Ian Kittichai and the Khum Hom culinary team. The collection traces the seasonal rhythms of Thailandโ€™s four regions, drawing on local produce, distinct microclimates and heritage recipes whose stories are increasingly rare to encounter.

โ€œThis menu is created to tell a story,โ€ says Chef Ian. โ€œIt is designed to convey culinary stories from across all regions of Thailand: the local ingredients, the distinct flavours that make Thai food so wonderfully diverse, and the stories behind dishes that are worth tasting.โ€

The journey begins with ๐Š๐š๐ง๐  ๐Š๐š๐จ ๐๐ฎ๐ž๐ค, an early Rattanakosin-era royal snack that demands patience and precision, its delicate taro texture revealing the quiet sophistication of courtly Thai cooking. From the South, ๐๐š๐ ๐Š๐ž๐ฎ๐ข ๐‚๐ก๐š๐ฅ๐ฎ brings depth and intensity through an additive-free krill paste, lifted by premium seafood, while ๐Œ๐ก๐ž๐ž ๐๐š๐ค ๐๐š๐ง๐š๐ง๐  layers tender noodles with a fragrant dried chilli sauce and a grilled river prawn.

Elsewhere, ๐˜๐ฎ๐ฆ ๐‡๐ฎ๐š ๐๐ฅ๐ž๐ž ๐๐ฅ๐š ๐…๐ฎ offers a bright, textural contrast: banana blossom salad, smoky herbs and grilled dried fish in elegant balance. ๐“๐จ๐ฆ ๐˜๐ฎ๐ฆ ๐๐š๐ค ๐‘๐จ๐ซ, a Songkhla-style soup, brings the regionโ€™s richness and heat into focus, capturing the boldness of southern Thai flavour with clarity and restraint.

Desserts continue the narrative with a sense of nostalgia. ๐Š๐š๐ง๐จ๐ฆ ๐“๐š ๐˜๐š๐›, delicately infused with pandan, is served with salted coconut sauce, while Ice Cream Boran reimagines ๐๐ก๐ฎ๐ค๐ž๐ญโ€™๐ฌ ๐๐ž๐ž ๐†๐จ ๐Œ๐จ๐ข in a homemade brioche, finished with toddy palm, palm seed and Prachuap Khiri Khan chocolate.

Conceived as a standalone restaurant rather than a conventional hotel or European dining room, is shaped around the rhythms of contemporary Bangkok life. Ahead of its grand opening in late June, the team is using this opening chapter to refine both service and menu, placing equal emphasis on atmosphere, timing and the overall guest journey.

Led by a chef-driven culinary vision, the menu draws from Mediterranean and Italian traditions while spotlighting premium seasonal ingredients and a flexible approach attuned to guest preferences. Wine sits at the heart of the experience, anchoring a dining style that feels expressive, leisurely and quietly sophisticated. The space itself evolves throughout the day, shifting from a bright, airy lunch setting to a more intimate evening mood suited to relaxed dinners and special occasions.

This May, Bangkokโ€™s creative calendar welcomes a new guest โ€” one that may prove difficult to forget. Artist Raider makes his city debut with The Guest That Never Left, an immersive exhibition at Chim Chim, the art-forward dining space inside ๐’๐ข๐š๐ฆ@๐’๐ข๐š๐ฆ ๐ƒ๐ž๐ฌ๐ข๐ ๐ง ๐‡๐จ๐ญ๐ž๐ฅ ๐๐š๐ง๐ ๐ค๐จ๐ค.

At the centre of the showcase is Raiderโ€™s universe of Scoop characters: curious, expressive figures that sit somewhere between collectible design object and contemporary art piece. Through a visual language shaped by movement, memory and the rituals of travel, The Guest That Never Left considers the fleeting encounters that stay with us long after the moment has passed.

Opening night takes place on Thursday 7 May, with Raider in attendance to meet guests and collectors.

The exhibition also marks the exclusive debut of ๐’๐ข๐š๐ฆ ๐’๐ฉ๐ข๐œ๐ž ๐’๐œ๐จ๐จ๐ฉ, a limited-edition collectible created especially for Bangkok. Produced in an edition of just 30 pieces, the work will be available exclusively at Chim Chim throughout the exhibition. To mark the opening, one Siam Spice Scoop will also be gifted to a guest on the night.

Blending character design, contemporary art and a playful sense of storytelling, Raiderโ€™s work has built a following among collectors drawn to objects with personality, humour and a strong visual signature. His Bangkok debut adds a fresh note to the cityโ€™s evolving dialogue between art, design and collectible culture.

Now entering its 17th edition in Thailand, the competition places renewed focus on long-term career growth for artists.

For 2026, the Established Artist Category introduces refined criteria that better reflect todayโ€™s art ecosystem. Artists are required to meet at least three professional benchmarks, including gallery representation, artwork sales, exhibition participation, grants or commissions, or previous art awards. The framework highlights not only creative output, but also the structures that support a sustained artistic practice.

Beyond the prize, the UOB Artist Alumni Network continues to support artists through residencies, exhibitions, and peer exchange across Southeast Asia. Recent alumni โ€” including Pannaphan Yodmanee, Jamilah Haji, and Tanyapat Manasarakul โ€” reflect the platformโ€™s role in connecting Thai and regional artists with international opportunities.

The 17th UOB Painting of the Year is now open to Thai citizens and permanent residents aged 16 and above.
