For its first major menu update of 2026, the restaurant introduces 23 new dishes by Chef Ian Kittichai and the Khum Hom culinary team. The collection traces the seasonal rhythms of Thailandโs four regions, drawing on local produce, distinct microclimates and heritage recipes whose stories are increasingly rare to encounter.

The journey begins with ๐๐๐ง๐ ๐๐๐จ ๐๐ฎ๐๐ค, an early Rattanakosin-era royal snack that demands patience and precision, its delicate taro texture revealing the quiet sophistication of courtly Thai cooking. From the South, ๐๐๐ ๐๐๐ฎ๐ข ๐๐ก๐๐ฅ๐ฎ brings depth and intensity through an additive-free krill paste, lifted by premium seafood, while ๐๐ก๐๐ ๐๐๐ค ๐๐๐ง๐๐ง๐ layers tender noodles with a fragrant dried chilli sauce and a grilled river prawn.
Elsewhere, ๐๐ฎ๐ฆ ๐๐ฎ๐ ๐๐ฅ๐๐ ๐๐ฅ๐ ๐
๐ฎ offers a bright, textural contrast: banana blossom salad, smoky herbs and grilled dried fish in elegant balance. ๐๐จ๐ฆ ๐๐ฎ๐ฆ ๐๐๐ค ๐๐จ๐ซ, a Songkhla-style soup, brings the regionโs richness and heat into focus, capturing the boldness of southern Thai flavour with clarity and restraint.
Desserts continue the narrative with a sense of nostalgia. ๐๐๐ง๐จ๐ฆ ๐๐ ๐๐๐, delicately infused with pandan, is served with salted coconut sauce, while Ice Cream Boran reimagines ๐๐ก๐ฎ๐ค๐๐ญโ๐ฌ ๐๐๐ ๐๐จ ๐๐จ๐ข in a homemade brioche, finished with toddy palm, palm seed and Prachuap Khiri Khan chocolate.
