Garlic Chicken Lo Mein
Ingredients:
8 oz lo mein noodles
2 tbsp vegetable oil
1 lb chicken breast, thinly sliced
3 cloves garlic, minced
2 cups mixed vegetables (carrots, bell peppers, broccoli)
1/4 cup soy sauce
2 tbsp oyster sauce
1 tbsp hoisin sauce
1 tsp sesame oil
Salt and pepper, to taste
Green onions, sliced (for garnish)
Directions:
Cook lo mein noodles according to package instructions, drain, and set aside.
Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Cook chicken until browned and fully cooked, then remove and set aside.
Add remaining oil to the skillet, sauté garlic for 1 minute, and add vegetables. Stir-fry until tender-crisp.
In a bowl, mix soy sauce, oyster sauce, hoisin sauce, and sesame oil. Add cooked chicken, noodles, and sauce to the skillet.
Toss everything together and stir-fry for 2-3 minutes. Season with salt and pepper, garnish with green onions, and serve.

Italian Meatloaf
Ingredients
1 lb. ground beef 80/20
1/2 lb. ground mild Italian sausage
1 yellow onion, finely chopped
1 bell pepper, finely chopped
1 tsp. olive oil
1 tsp. Worcestershire sauce
1 tbsp. minced garlic
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. parsley
2 eggs, beaten
½ cup Italian bread crumbs
½ cup panko
1 T. milk
1 cup shredded mozzarella cheese
3/4 cup of shredded mozzarella, for topping
1/4 cup parmesan cheese

Instructions
In a small skillet, over med-high heat, add your olive oil, onion, and bell pepper saute for 3-4 minutes.
Stir often until onions are translucent.
Set to the side to cool.
In a large bowl, add the beef, sausage, onion mixture, seasonings, eggs, milk, cheese, bread crumbs, panko, and Worcestershire sauce.
Mix to combine using your hands.
Spray your loaf pan with non-stick cooking spray.
Place the meatloaf mixture into a loaf pan, press to evenly distribute the meatloaf mixture.
Place in a 400-degree oven for 50 minutes.
Remove from the oven and top with the remaining cheese and sprinkle a little dry basil over the top.

TACO SPAGHETTI
Ingredients
1 lb ground beef
1 medium onion chopped
3 cloves garlic
2 10-ounce cans Rotel tomatoes
¼ cup taco seasoning
3 cups low sodium beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire Sauce
12 ounces spaghetti noodles
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack Cheese
Chopped fresh cilantro
Instructions
Brown the ground beef in a Dutch oven or large pot over medium heat. When the beef is about halfway browned, add the onions and continue cooking until the beef is browned and the onions are soft.
Reduce the heat to low and add the garlic. Stir and cook for 1 minute.
Increase the heat to medium and add the Rotel tomatoes, taco seasoning, beef broth, tomato paste, and Worcestershire sauce. Bring the mixture to a boil.
Add the spaghetti. Reduce the heat to a simmer and cook until the spaghetti is tender, approximately 15-20 minutes. Scrape the bottom of the pot several times and stir frequently.-

Graham Cracker Toffee
Ingredients:
2 sleeves graham crackers
1 ¼ cups butter (2 ½ sticks)
1 ¼ cups brown sugar
2 ½ cups chopped pecans
1 teaspoon vanilla extract
¾ cup mini semi-sweet chocolate chips
Instructions:
Preheat oven to 350°F.
Arrange graham crackers in a single layer on a large baking sheet lined with parchment paper or a silicone baking mat.
Melt butter in a medium saucepan over medium heat. Add brown sugar and cook until bubbling. Boil, stirring constantly, for 2 minutes. Remove from heat and stir in vanilla extract and chopped pecans.
Carefully pour the hot pecan toffee over the graham crackers and gently spread with a spatula.
Bake at 350°F for 10 minutes.

Chicken Au Gratin Casserole
Ingredients
4 cups rotisserie chicken, chopped (or other type of flavored cooked chicken)
12-16 oz package frozen vegetables (I use the broccoli, corn, and red pepper blend) use your favorite blend
2 (10.5oz) cans cream of soup (celery, mushroom, or chicken)
1/2 cup milk
8 oz sour cream
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
1 sleeve ritz crackers
4 TBS butter, melted
1 cup cheddar cheese, shredded
green onions, sliced for garnish
Instructions
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
Place chopped cooked chicken into bottom of prepared baking dish evenly. Spread out frozen vegetables evenly across the chicken.
In a large mixing bowl whisk together cream of soups, 1/2 cup milk, sour cream, salt, pepper, garlic powder, onion powder, and paprika. Pour mixture all over the vegetables in casserole dish and smooth evenly.
In a ziploc bag crush ritz crackers into crumbs. Pour into a medium bowl. Add in melted butter and mix until crumbs are coated well with the butter. Sprinkle crumb mixture all over the casserole. Top with shredded cheese evenly across casserole.
Bake in preheated oven for 40 minutes until cheese is melted and casserole is heated through. Top with green onions as a garnish if you wish. Best served over cooked egg noodles, rice, or mashed potatoes.

CHICKEN SHAWARMA
Homemade Chicken Shawarma recipe bursting with aromatic spices and tender grilled chicken, this dish is a perfect balance of savory and tangy.
Ingredients:
2 lbs Chicken thigh fillets, boneless and skinless
2 cloves Garlic, minced
3 tbsp Lemon juice
3 tbsp Olive oil
2 tsp Ground coriander
2 tsp Ground cumin
2 tsp Paprika
2 tsp Salt
1 tsp Ground allspice
1/4 tsp Ground black pepper
8 pieces Pita bread
3 cups Lettuce, shredded
1 Red onion, thinly sliced
4 Tomatoes, sliced
1 1/2 cups Plain yogurt
2 tbsp Mayonnaise
1 tbsp Sriracha sauce (adjust to taste)
1 tsp Garlic powder
1 tsp Onion powder
Salt and pepper to taste
Instructions:
Marinate the Chicken:
In a large bowl, combine minced garlic, lemon juice, olive oil, ground coriander, ground cumin, paprika, salt, allspice, and black pepper. Mix well.
Add the chicken thigh fillets to the marinade and toss until evenly coated. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to develop.
Prepare the Sauce:
In a small bowl, combine plain yogurt, mayonnaise, Sriracha sauce, garlic powder, and onion powder. Season with salt and pepper to taste. Stir until well combined. Refrigerate until ready to use.

Ingredients:
2 cups dry macaroni
6 oz claw crab meat
8 oz shrimp, peeled and deveined
8 oz sour cream
4 tablespoons butter
2 tablespoons flour
1 spring onion
1 can evaporated milk
8 oz block sharp white cheddar cheese
4 oz block mozzarella cheese
¼ cup panko bread crumbs
Salt and black pepper, to taste
Directions:
Preheat the oven to 350°F.
Peel and devein shrimp if needed.
Cook macaroni according to package directions. Drain well.
Place drained macaroni in a large mixing bowl and stir in sour cream until coated.
Add crab meat and mix well.
Finely chop the spring onion and set aside.
Grate the white cheddar and mozzarella cheese and set aside.
In a medium saucepan, melt butter and cook shrimp just until done. Remove shrimp, chop slightly when cooled, and add to the macaroni mixture.
In the same saucepan, sauté chopped onions until tender. Sprinkle in flour and cook for about 1 minute.

2 celery stalks, diced
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
4 cups chicken broth
2 cups cooked chicken, shredded
1 cup half-and-half or heavy cream
1 package (16 oz) potato gnocchi
2 cups fresh spinach, chopped
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Instructions:
In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
Add the minced garlic, diced carrots, and diced celery to the pot. Cook for another 5 minutes until the vegetables are tender.

Directions:

1/2 teaspoon ground black pepper
Pinch red pepper flake, optional
10 oz linguine
1 tablespoon cornstarch
2 tablespoons water
4 green onions, sliced
PREPARATION
In a large pot of boiling water, cook the pasta according to package directions. Drain and set aside.
In a large skillet over medium-high heat, brown ground beef until no longer pink.
Drain fat as needed, then add garlic and cook until fragrant, about 1 minute.

Ingredients:
1 cup ketchup
1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
2 lbs lean ground beef
30 Ritz Crackers
2 oz Lipton onion soup mix
2 eggs
3 cups macaroni noodles
2 cups milk
10.5 oz condensed cheddar cheese soup
1 tsp salt
1 tsp pepper
1 tbsp garlic powder
1 tbsp onion powder
4 cups shredded mozzarella and cheddar cheese blend
Instructions:
Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
In a medium mixing bowl, combine the ketchup and barbecue sauce. Set aside.
In a large mixing bowl, add the ground beef. Crush Ritz Crackers and add to the bowl. Add the Lipton onion soup mix and eggs. Pour in 1/2 cup of the ketchup and barbecue sauce mixture.
Mix all ingredients together until fully combined. Press the mixture evenly into the baking dish. Spread the remaining ketchup and barbecue sauce on top.
