For the pork loin and marinade:
6 boneless pork loin chops (about 1/3 inch thick, 2 pounds)
2 stalks lemongrass, white part only, minced
3 garlic cloves, minced
1/2 shallot, minced
6 tablespoons fish sauce
1 tablespoon dark soy sauce
3 tablespoons honey
2 tablespoons cooking oil, separated

For the dipping sauce:
3 tablespoons fish sauce
2 tablespoons sugar
4 tablespoons water
1 tablespoon lime juice
1 tablespoon rice vinegar
1 garlic clove, minced
1 bird’s eye chili, chopped
1 tablespoon carrot, julienned

For the scallion oil:
2 stalks scallions, thinly sliced

Simple, comfort food - merely season, marinate, and bake!

You’ll Need (serves 4):
• 6–8 chicken thighs (boneless or bone-in) · sea salt & pepper · 500g baby potatoes (halved) · 3 large carrots (peeled & chunked) · ½ cup fresh lemon juice · ⅓ cup olive oil · 1 tbsp Dijon mustard · 1 tbsp honey · 1 tbsp dried oregano · 3 garlic cloves (thinly sliced) · sprigs of fresh thyme or rosemary

How to Prepare:
Season chicken thighs with salt and pepper. Whisk lemon juice, olive oil, Dijon, honey, oregano, and garlic in a bowl. Pour over chicken, potatoes, and carrots in a large roasting dish. Top with fresh thyme or rosemary. Bake uncovered at 400°F (200°C) for 40–45 min, until chicken is golden and veggies are tender.

Tip:
Serve with a crisp lettuce salad and crusty bread, or low-carb side like cottage cheese sprinkled with parsley.

1/4 cup fresh lime juice
1 tablespoon lime zest
1/4 cup fresh cilantro, chopped
2 cloves garlic, minced

Directions:

Pat the scallops completely dry with paper towels and season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot and shimmering, carefully add the scallops in a single layer.
Sear the scallops for about 2 minutes per side, or until a golden crust forms. Avoid overcrowding the pan for optimal results.
Remove the scallops from the skillet and set aside on a warm plate.
