Honey Garlic Salmon with Creamy Mashed Potatoes & Broccolini 🍯🥔🥦
A restaurant-quality dinner that exudes comfort and flavor, this dish features caramelized honey garlic salmon fillets glazed to perfection, served atop velvety mashed potatoes accompanied by tender broccolini. Ingredients
For the salmon:
2 salmon fillets (6 oz each)
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, minced
2 tbsp honey
1 tbsp soy sauce
½ tsp chili flakes (optional)
Salt and black pepper, to taste
For the mashed potatoes:
2 large potatoes, peeled and cubed
2 tbsp butter
¼ cup milk (or cream for extra richness)
Salt and pepper, to taste
1 tbsp chopped parsley (optional)
For the broccolini:
1 bunch broccolini
1 tsp olive oil
Salt and pepper, to taste
Directions
Prepare the mashed potatoes:
Boil potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, milk, salt, and pepper until smooth and creamy. Keep warm.
Cook the broccolini:
Steam or lightly sauté broccolini with olive oil, salt, and pepper until bright green and tender-crisp (about 3–4 minutes). Set aside.
Make the salmon glaze:
In a small bowl, mix honey, soy sauce, and minced garlic.
Cook the salmon:
Heat olive oil in a skillet over medium heat. Season salmon with salt and pepper. Sear for 3–4 minutes per side until golden and flaky. Add butter and the honey garlic sauce to the pan; cook for another 1–2 minutes, spooning the sauce over the salmon as it thickens.
Assemble the plate:
Spread mashed potatoes onto a plate, place the salmon fillets on top, drizzle with extra glaze, and serve with broccolini on the side.
