Perched high above Bangkok at The Okura Prestige, Michelin-starred Elements, inspired by Ciel Bleu blends French fine dining with delicate Japanese infusions. Leading by Chef Gerard Villaret, this culinary theatre pairs breathtaking city views with a relaxed yet refined atmosphere.
For this season, I experienced the Summer Gastronomic Dining Journey — ‘Chikyu’, a symphony of vibrant flavours designed to capture the soul of summer:
Amuse Bouche – A perfect opening bite that sets the tone.
Hiramasa Crudo — watermelon gazpacho, tomato concasse, avocado ice cream
Stone Milled Yame Tanaka Flour & Shiitake Brioche – Served with salted French butter & smoked Ariake sea nori butter
Homemade Yakisoba Noodles — Bafun Uni, Hojiso, Myoga
Jean Larnaudie Foie Gras – Paired with artichokes, dashi vinegar glaze, and 24-month aged Gruyère.
Koji Cured Iwate Madara – Sweet peas, clear pancetta broth > Refined umami depth.
Hokkaido Wagyu A4 Striploin – Tender, marbled, grilled to perfection.
Strawberry Kombucha Granita – A palate-cleansing interlude.
Yamanashi Hikawa Hakuhou Peach – With Cha-am lemon custard, vanilla chantilly, and macadamia sable.
Tonka Bean Cheesecake — Hokkaido milk, meringue, pecan miso ice cream
Every dish was a balance of textures, temperatures, and artistry — playful yet sophisticated, light yet deeply satisfying.
