Have you ever tried Leng Saep? 🌶🍖

Leng Saep (เล้งแซ่บ) is one of Thailand's most iconic street food dishes. The word "Leng" refers to pork backbone or spine bones with tender meat still attached, while "Saep" is an Isan (Northeastern Thai) word that means deliciously spicy and flavorful. Although inspired by the bold flavors of Isan cuisine, Leng Saep became especially popular in Bangkok's vibrant street food scene before spreading across Thailand and beyond.

The dish is made by slowly simmering pork backbone until the meat becomes incredibly tender, then serving it in a clear broth bursting with fresh lime juice, fish sauce, garlic, cilantro, and an abundance of bird's eye chilies. The result is a perfect balance of spicy, sour, savory, and refreshing flavors that keeps you coming back for more.

I finally had the chance to try Leng Saep, and it definitely lived up to its reputation. The meat was so tender that it fell right off the bone, and the broth was rich, aromatic, and packed with flavor. Every spoonful delivered the perfect kick of heat and tangy freshness. It was an unforgettable meal, and I can honestly say it was absolutely delicious!
