An "Ode to the Dark," a tribute to the dark and rich Pedro Ximénez sherry casks in which this luscious whisky was aged. This isn't just a PX finish—this is fully matured in PX casks! It's deep, it's dark, it's a sherry bomb! But not a bomb in the sense that it will blow out your palate with an alcohol burn—it's a bomb in the sense that it's so complex, and it's just so much sherry!
這不是那種追求平衡、甜美、好入喉的典型雪莉桶威士忌；這是一支有個性、有態度的酒，它有故事要說。它深邃、黑暗、濃厚又成熟，酒體飽滿，層次豐富。這是一支獻給真正熱愛雪莉風味、熱愛複雜性與個性的品飲者的威士忌，而不是為了輕鬆喝的酒。
This isn't the typical sherry cask whisky that strives for balance, sweetness, and easy drinking. This whisky has attitude and character and has a story to tell. It's deep, dark, rich, complex, very mature, full-bodied, with a ton of depth and layers. This whisky is for someone that loves sherry and loves character and complexity over easy drinking.
聞香(Nose):
濃郁雪莉、乾果、葡萄乾、煙草、橡木、麝香、焦糖。50.8% 的酒精濃度帶來些許酒精感，讓它醒一下，你會發現青蘋果的氣息浮現。
Deep, rich sherry, dried fruits, raisins, to***co, oak, musk, caramel. At 50.8%, there's also a bit of ethanol/alcohol on the nose. Let it breathe a little and you'll also find some green apple.
口感Palate:
入口(前段) Entry / Front of the Palate:
濃郁雪莉、乾果、葡萄乾、煙草、橡木、麝香、焦糖。50.8% 的酒精濃度帶來些許酒精感，讓它醒一下，你會發現青蘋果的氣息浮現。
There's crème brûlée and dessert-like sweetness on the front of the palate, but it quickly gives way to a lot of darker notes.
中段口感Mid Palate:
酒體開始演化，變得更濃厚、更深沉。這裡出現大量的皮革、煙草以及草本調性（如果你懂那種中藥味，你就知道）。
The whisky starts evolving and becomes richer and darker. Here there's lots of leather, to***co, and herbs (Chinese medicine—if you know, you know).
後段口感Back Palate:
越喝越黑暗、越深入！這裡能感受到更多橡木、深焙咖啡、可可與黑巧克力的苦韻。
We're diving deeper and darker! Here you'll find more oak, dark roast coffee, cocoa, and dark chocolate.
尾韻Finish:
中等偏長的收尾，不會太短也不算極長。尾段帶點苦味、草本、中藥味、焦油與橡木餘韻。
The finish is a medium-plus finish—not too short or long. There's a bit more bitterness, herbs, Chinese medicine, tar, and oak.
加水後的變化Add a Bit of Water:
加一點水之後，酒體變得更柔和、更甜美。我感受到罐頭水蜜桃、更多焦糖布蕾、布丁甜香，酒精感也大幅緩和。
The whisky becomes much softer and sweeter. I'm getting canned peaches, more crème brûlée, flan, and the ethanol softens up quite a bit.
總結Conclusion
這是一支深沉、黑暗、又極為成熟的威士忌。它很厲害，但老實說，並不是每個人都會愛上它。為什麼呢？因為它不是那種可以拿來開趴、跟朋友乾杯的酒；它更適合你在某個安靜的晚上，靜靜坐下來，好好跟它相處，也許你會邊翻一本書、邊聽點音樂，或者只是和一位老朋友聊點人生。這瓶威士忌酒像是你的老朋友。它的層次很多，風味很深，你會越喝越被它吸引，然後不知不覺就走進它的故事裡。這不是快快喝完的酒，是一段值得你慢慢品味的旅程。慢慢來，好好享受，朋友。
A deep, dark, mature whisky. A very nice whisky, but it's not for everyone. Why? Well, this isn't the whisky you take shots of with friends. This is the whisky you sit down and take your time with. Maybe you drink this when you read a book, or listen to some music, or when you want to have a quiet conversation with a good friend. This whisky is like an old friend. You'll get lost in its complexity and depth, and you're going to love the journey. Enjoy it my friend!
