Werbung weil Pressereise.
I was invited by Travel Belize to learn more about this small country in Central America, tucked between Mexico, Guatemala and the Caribbean Sea. Before the trip, I didn't know much about Belizean cuisine and wrongly assumed it would be similar to Mexican food. Turns out I wasn't completely wrong, but also a bit ignorant towards Belizeans regarding their own food culture, heritage and identity. Here are some things I ate and enjoyed very much, so you don't make the same assumptions as I did. 🫶

After a week of road tripping around Bosnia & Herzogovina makes me think that summer in this beautiful country is just elite.

The cities were interesting to see, but the lakes, mountains and rivers were my highlights, full of fig trees, ripe plums and crystal clear ice cold turquoise waters. The people were generous and always had some friendly words to share. The food is a delicious mix shaped by the Balkan regions, Mediterranean ingredients and Ottoman + Austrian-Hungarian historical influences.

Came with not much knowledge and expectations, left with a lot to reflect on and full bags of wonderful memories.

If you put two culinary icons together, you'll get something I call Vitello Tonnato Kongguksu! I've been eating a lot of chilled Kongguksu this summer and since I started working out, I wanted to increase the protein in the sauce, which ultimately led me to this delicious combo:

For 2:
1 can of tuna
1 boiled egg
1 tbsp capers
5 anchovies
1 tsp dijon mustard
150ml soy milk
180g dried wheat noodles (spaghetti or soba also tastes great)
To garnish: boiled egg, cucumber, capers, anchovies, chili oil

July was a great month for eating out and as always, this is a fraction of what I really liked. The little list is a mix of oldies and newbies, they are doing a great job in delicious cooking but also representing the food of one country/place/region/community in Berlin. Without all the divers flavors, aromas, dishes and ingredients, we wouldn't be able to learn and taste food from all over the world in one city. 🫶

Liangfen is popular in North China and Sichuan, especially in the summer as a great cold snack! You need to make this a staple during the warm months and it's even more chill straight out of the fridge.

To make the noodles:
100g mung bean starch
200g water to dissolve
1l water to boil

For the sauce:
3 tbsp warm water
1/2 tsp sugar
1/4 tsp salt
1 tbsp soy sauce
1 tbsp Chinese black vinegar
1 pressed garlic
1 tbsp chili oil with crisps
1 tsp toasted sesame seeds
a few slices of cucumber

Let's get through the heat wave in Europe together by eating a lot of cold noodles for the next few days. Here's another 10min cold noodle recipe that takes the best simple ingredients for maximum refreshing flavors.

For 1 serving
~100g wheat noodles
250g watermelon
4-5 tbsp kimchi water
1 tbsp soy sauce
1 tsp rice vinegar
1 tsp sugar
1 egg for the omelette
a few slices of cucumber
a few slices of radish kimchi

This recipe is very much inspired by Korean cold noodles, because they do it the beeest! Enjooooy!

For the upcoming heatwave days, where you want to keep the stove off, make this 10min cold noodle dish:

100gr dried wheat noodles
1 tbsp gochujang
1,5 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sugar
1 tsp toasted sesame oil
1 clove of garlic pressed
1 tbsp water
handful sliced cucumber
boiled egg

Additional toppings: sliced carrots, kimchi, kimchi water in the sauce etc. I feel Korea has cracked the cold noodle game to get us through the entire summer. Enjoooooy!

Contrary to popular belief, a century egg is not a century old. It's a preserved duck egg that's been buried in a highly alkaline environment for weeks up to several months. It's a very versatile ingredient to cook with and one of my favorite ways to use it is smashing it into a delicious sauce:

1 century egg
2 tbsp soy sauce
1 tbsp Chinese black vinegar
1 tsp sugar
1 tsp Sichuan pepper oil (optional chili oil)
2 tbsp noodle water
~ 90g dried wheat noodles
a handful chopped cucumber
1-2 tsp toasted sesame seeds
