Can’t say enough about this dish! It was
Recipe:

- 1.5 lbs skin on salmon filet
- 5-8 new potatoes or creamer potatoes
- Package of Arugula
- 4 sliced cooked beets
- 1/4 cup crushed walnuts
- Feta cheese
- Orange or mandarin slices
- About 1/2 cup Greek yogurt
- 1 Tsp each Fresh herbs (thyme, oregano, rosemary, dill)
- 1/2 Tbsp dill
- Juice of 1 lemon
- 1/2 Tbsp Minced Garlic
- 1 thinly sliced shallot
- Olive oil
- Balsamic glaze

Wedge potatoes and toss in oil season with salt and pepper put on wire rack and place in the oven at 350-375 for about 40 minutes

Make your yogurt sauce by combining yogurt, garlic, herbs, salt, pepper, lemon juice and 1 tsp of olive oil

Combine your arugula, shallots, nuts, beets with a tbsp of olive oil and topping with feta, and orange slices then drizzle with balsamic glaze once plated.

Pan fry salmon, skin side down starting at a medium high heat and reducing to a medium low. Once you see the salmon turning to a lighter white color along the sides (about 15 minutes) flip and finish cooking through until it hits 135-140 internal basting in with hot oil.

Plate and enjoy!!
