How it started >> how it’s going 🤍

and I are celebrating the big 🔟 today. In the last 10 years, we’ve moved 4 times, lived in a camper for a year, built a house, weathered 2 deployments, brought 2 beautiful children into the world, grieved the loss of 2 beautiful children we never got to meet, made so many incredible friends, grieved the loss of some of those friends, gone on so many adventures that I never imagined I’d go on, and learned (and are still learning) so much about each other and what marriage is all about. In some regards, these last 10 years seem to have flown by. But I also feel like I’ve lived 3 lifetimes in that time.

I may not say it enough, but I’m grateful to be on this journey with you and I love you so much 🤍

This is still a family favorite! I absolutely love this time of year and I waste no time busting out the soups. If you’ve never tried this one, here’s your sign. Make sure to follow along for more fall recipes!

Creamy Chicken Enchilada Soup

Ingredients:
Olive oil
1 small onion, chopped
3-5 cloves of garlic, pressed
2 chicken breasts (*see note)
Taco seasoning
8 oz cream cheese, softened
3/4 cup red enchilada sauce
1 tsp cumin
The tiniest smidge of cayenne (unless you like it spicy)
3/4 cup chicken broth
1 can black beans, drained and rinsed
1 can corn, drained and rinsed
1 can Rotel

Drizzle some olive oil in your pot, then saute your onion and garlic. *If you choose to chop your chicken, season with taco seasoning and add it to your pot to brown. If you prefer shredded chicken, add your chicken to an Instant Pot with a splash of chicken broth and taco seasoning. Cook on high pressure for 10-15 minutes. Allow pressure to manually release for at least 5 minutes. Then shred your chicken and add to your stove pot.

While all that is cooking, add your cream cheese, enchilada sauce, cumin, and cayenne to a bowl and mix well using a hand mixer or immersion blender. Then add this mixture, along with the chicken broth, to your stove pot and mix well. Once combined, add your beans, corn, and rotel. Mix well and allow to simmer for 15 minutes. Once you feel that all flavors are well combined, you’re ready to eat!

Serving suggestions:
This would be great over rice or topped with tortilla strips. You could also garnish with shredded cheese.

Part 2 | Mornings Made Simple

Comment MORNING and I’ll send you my quick guide with 🔗🔗 to all the things we use!

1 - Family prayer requests and prayer time. We recently got the prayer journal and it’s honestly the best. We love this because our kids get to let us know what’s on their hearts, they get to hear what’s on ours, and we all get to celebrate when those prayers are answered.

2 - We use Heritage Hymns by for our hymn study and it’s amazing! Monday we listen to the traditional version of the hymn, Tuesday we watch a video or read a story about it’s history, then on Wednesday and Thursday we listen to other versions (Celtic, soul, country, etc).

3 - CNN10 is a quick 10 minute news segment for kids and we’re really enjoying it. I get asked a lot if it seems biased or if there are questionable stories and so far, we haven’t come across anything that would make me turn it off.

4 - We use 3 different books during the week to do our state study. We always start by listening to the Fifty Nifty United States song because it was a staple in my childhood so I had to pass it down 😅 and then we take Monday/Tuesday for one state and Wednesday/Thursday for another. We talk about the capital, state bird, flower, etc., when it became a state, and any other fun facts.

And that’s it! For now 🤭 it’s all done over breakfast and it has become such a great way to start our day and wake our brains up.
