Lemon Garlic Veggie & Quinoa Bowl
Ingredients:
• 1 cup cooked quinoa
• 1 zucchini (sliced)
• 1 red bell pepper (chopped)
• 1/2 red onion (sliced)
• 1 cup broccoli florets
• 2 tbsp olive oil
• Juice of 1 lemon
• 2 cloves garlic (minced)
• Salt, pepper, paprika to taste
Instructions:
1. Preheat oven to 400°F.
2. Toss veggies in olive oil, garlic, lemon juice, and seasonings.
3. Roast for 20–25 mins until tender.
4. Serve warm veggies over cooked quinoa. Add avocado or a drizzle of tahini if desired!
