Kick up your kids’ Mac n Cheese with a few easy ingredients!

Dad’s Special Mac n Cheese:

Ingredients
• 1 Box Mac n Cheese (garnish)
• 16 oz (450g) spaghetti or penne
• 6 oz (170g) guanciale, cut into small cubes or strips
• 4 egg yolks
• 1 cup finely grated Pecorino Romano
• Freshly cracked black pepper
• Pasta water
• Salt

Directions

1. Add guanciale to a cold pan and cook over medium-low heat until the fat renders and the edges are crisp. Remove from heat.
2. Whisk eggs, yolks, Pecorino and plenty of black pepper into a thick paste.
3. Cook pasta in lightly salted water until just shy of al dente. Reserve the pasta water.
4. Slowly whisk 1–2 tbsp hot pasta water into the egg mixture to loosen it.
5. Add drained pasta to the guanciale and rendered fat. Toss well, then let the pan cool off the heat for about 30 seconds.
6. Add the egg/cheese mixture and toss vigorously.
7. Add pasta water a splash at a time while tossing until the sauce is smooth, creamy and glossy.
8. Serve immediately with more Pecorino, black pepper and
guanciale on top.
