The way these spinach, feta & egg white wraps take me right back to high school… nostalgic bc I was obsessed 🤌
Ingredients:
• 4 Mission Carb Balance tortillas (this part matters, get that fiber girlllll)
• 2 cups egg whites
• 1 cup cottage cheese
• 4 oz crumbled feta
• Frozen spinach
• Italian seasoning
• Mozzarella, if you’re feeling like that
How to make them:
Mix your egg whites and cottage cheese, pour into a greased sheet pan (sometimes I blend them, sometimes I don’t). Sprinkle frozen spinach on top, season with Italian seasoning, add mozzarella if using. Bake at 400° for 15 minutes. Chop into 4 squares, put a square on your tortilla, feta in the center, fold and roll.
Fridge for 3 days or freeze them. Reheat in a pan so the outside gets crispy.
