Ingredients
12 oz spaghetti
1 lb sirloin or ribeye steak, cut into bite-sized pieces
2 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
2 cups fresh broccoli florets
1 cup heavy cream
¾ cup whole milk
1 cup freshly grated Parmesan cheese
½ tsp garlic powder
¼ tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
Fresh parsley, for garnish
Directions
Cook the spaghetti
In a large pot of salted water, cook spaghetti according to package directions until al dente. Drain and set aside.
Blanch the broccoli
Add broccoli florets to the pasta water during the last 2 minutes of cooking. Drain along with the spaghetti and set aside.
Sear the steak

🍋 Juice of 1 lemon + 1 tsp grated zest
🧄 100 ml chicken broth (about ⅓ cup)
🥛 100 ml heavy cream (or double cream)
🌿 1 tsp dried Italian seasoning or oregano
🌿 2 tbsp chopped parsley (plus extra for garnish)
Sides:
🍚 1 cup cooked long-grain rice (like jasmine or basmati)
🥔 1 medium potato, cut into wedges
🛢️ 1 tbsp olive oil (for roasting)
🧂 Salt, pepper, pinch of chili flakes

Serves: 3–4

Ingredients
For the squid:
Squid (cleaned & sliced into rings) – 500 g
Turmeric powder – ¼ tsp
Salt – to taste
Water – ½ cup
For the masala:
Coconut oil – 3 tbsp
Mustard seeds – ½ tsp
Curry leaves – 2 sprigs
Onion – 2 large, thinly sliced
Green chillies – 2, slit
Ginger-garlic paste – 1 tbsp
Tomato – 2 medium, chopped
Kashmiri red chilli powder – 1½ tsp
Coriander powder – 2 tsp
Turmeric powder – ¼ tsp
Black pepper powder – ½ tsp
Fennel powder – ½ tsp
Garam masala – ½ tsp
Salt – to taste
Optional: A squeeze of lemon juice and fresh coriander leaves for garnish
Method
Parboil the squid:
In a pan, add squid, turmeric, salt, and ½ cup water.
Cook covered for 3–4 minutes until squid turns opaque (don’t overcook).
Drain and set aside.
Prepare the masala:
Heat coconut oil in a pan.
Splutter mustard seeds, add curry leaves.
Add sliced onions and sauté until golden brown.
Add green chillies and ginger-garlic paste; sauté till the raw smell goes.
Add tomatoes & spices:
Add chopped tomatoes and cook till soft and mushy.
Add red chilli powder, coriander, turmeric, pepper, fennel, and garam masala.

Add the boiled squid and mix well.
Roast on medium heat for 8–10 minutes till masala coats the squid and turns dark.
Stir occasionally to avoid burning.
Finish:
Add curry leaves, a squeeze of lemon juice, and toss.
Garnish with coriander leaves if desired.
