Crustless Rhubarb Custard Pie 🍰🌸

ingredients:

- 3 cups rhubarb, diced 🌿
- 1/3 cup flour 🌾
- 3/4 cup granulated sugar 🍬
- 1/2 teaspoon baking powder 🥄
- 1/2 teaspoon salt 🧂
- 4 large eggs 🥚
- 1 tablespoon vanilla extract 🌼
- 1 cup milk 🥛
- 1 teaspoon butter, softened (for greasing the pie plate) 🧈

instructions:
1. Preheat the oven to 375°F (190°C) 🔥. Clean and dice the rhubarb 🌿.
2. Generously grease the bottom and sides of a pie plate with the softened butter, then add the diced rhubarb 🧈.
3. In a blender, mix the flour, sugar, baking powder, salt, eggs, vanilla, and milk until smooth—about 1–2 minutes 🌀.
4. Pour the blended mixture over the rhubarb in the pie plate 🍶.
5. Bake for 40 minutes. The center should still have a slight jiggle when done—it’ll firm up as it cools 🕊️.
6. Let it rest for 10–15 minutes before serving 🍴.

Crab and Shrimp Stuffed Salmon

Ingredients:
4 salmon fillets (6 oz each)
1/2 cup cooked shrimp, chopped
1/2 cup lump crab meat
2 tablespoons mayonnaise
2 tablespoons cream cheese, softened
1 teaspoon Dijon mustard
1 teaspoon Old Bay seasoning
2 tablespoons chopped green onions
1 tablespoon chopped fresh parsley
1/2 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon lemon juice
1 tablespoon olive oil

Directions:
Preheat the oven to 375°F (190°C).
In a medium bowl, combine shrimp, crab meat, mayonnaise, cream cheese, Dijon mustard, Old Bay seasoning, green onions, parsley, garlic powder, lemon juice, salt, and pepper. Mix well.
Pat the salmon fillets dry with a paper towel. Using a sharp knife, cut a slit in the side of each fillet to create a pocket without cutting all the way through.
Stuff each salmon fillet generously with the crab and shrimp mixture.
Place the stuffed fillets on a lightly greased baking sheet or baking dish.
Drizzle olive oil over the salmon and season lightly with salt and pepper.
Bake for 18 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve hot with your favorite sides and a fresh squeeze of lemon.

Baked Caprese Chicken

Ingredients:
4 boneless, skinless chicken breasts
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons olive oil
2 cups cherry tomatoes, halved
8 oz fresh mozzarella, sliced
2 tablespoons balsamic glaze
Fresh basil leaves

Instructions:
1. Preheat Oven:
Preheat to 375°F (190°C).
2. Season Chicken:
Season chicken with Italian seasoning, salt, and pepper.
3. Sear Chicken:
Heat olive oil in a skillet. Sear chicken on both sides until golden, about 2-3 minutes per side. Transfer to a baking dish.
4. Add Toppings:
Top chicken with cherry tomatoes and mozzarella slices.
5. Bake:
Bake for 20-25 minutes or until chicken is cooked through (165°F/74°C internal temp).
6. Finish:
Drizzle with balsamic glaze and garnish with fresh basil.

One of THE VERY BEST SALISBURY STEAK
1 (10 1/2 ounce) cans Campbell's French onion soup
1 1/2 lbs ground beef
1/2 cup dry breadcrumbs
1 egg
1/4 teaspoon salt
1/8 teaspoon ground black pepper, to taste
1 tablespoon all-purpose flour
1/4 cup ketchup
1 -3 teaspoon Worcestershire sauce, to taste
1/2 teaspoon mustard powder
1/4 cup water
How to make it :
In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper.
Shape into 6 oval patties.
In a large skillet over medium-high heat, brown both sides of patties.
Pour off excess fat.
In a small bowl, blend flour and remaining soup until smooth.
Mix in ketchup, water, Worcestershire sauce and mustard powder.
Pour over meat in skillet.
Cover, and cook for 20 minutes, stirring occasionally.
