I’m happy to report that this whole meal comes together in under 25 minutes and the balls come out perfect EVERYTIME. Since the shrimp are processed and ground, there’s less room for air since we’re evenly distributing the protein through a ball mixed with bread crumbs and tangy beautiful feta *duhhhhh*. Homemade 🇬🇷Greek-Style Potato Chips 🤤+ AIR FRYER GIVEAWAY! (recipe below👇) I grew up in my parents’ Greek restaurant, and when I was really hungry after a long school day, I’d head back to the fryer and make french fries tossed with greek seasoning and topped with olives, feta, oregano and tzatziki. These Greek-style potato chips are inspired by that childhood memory, and they’re made extra crispy in my Basket Air Fryer! These chips get SO crispy, and they’re perfect for loading up with all of my favorite Greek toppings. 🚨HERE’S HOW YOU CAN WIN AN AIR FRYER! Comment ‘RECIPE’ and we’ll send the recipe straight to your DMs 💌 or bookmark the recipe below! 👇 Homemade Greek-Style Potato Chips Serves 1-2 2 russet potatoes 1 tbsp olive oil 3/4 tsp garlic powder 3/4 tsp onion powder 2 tsp dried oregano 1 tsp salt pinch of pepper ¼ - ½ crumbled feta cheese lemon zest (optional) Slice the potatoes super thin with a knife or on a mandolin if you have one - about 1/16 inch. In a large bowl add all the potato slices and fill with cold water, even adding some ice cubes to keep the water cold. Let soak for 30 minutes. Drain the potatoes and pat them as dry as you can. Add the dried potatoes to a dry bowl and season with olive oil. Toss to coat, ensuring all of the slices are seasoned. Set the air fryer to 350F. Cook in batches and make sure you only have about one layer at a time of potatoes in the bottom of the basket, it’s ok if the potatoes are overlapping. Air fry for 12-15 minutes, flipping halfway through. Repeat with potatoes until they’re all cooked. Once all chips are cooked, season with garlic powder, onion powder, dried oregano, salt, pepper and toss gently. Top with crumbled feta and lemon zest (if desired). As someone who spends the majority of my time in the kitchen, it’s important to look at ways I can reduce food waste. Did you know that 43% of food waste in the U.S. happens at the household level? Take inventory of your groceries before buying or consuming others. 2. Meal Plan - plan out exact ingredients you need to avoid unnecessary waste. 3. Food Storage - store your food properly - simple hacks can help you save dollars and days on certain household food items. 4. Lastly, composting for me is a must. Welcome back to Episode 27 of All Things Greek. Today we are making Maroulosalata (Greek Lettuce Salad). This is a salad I’ve grown up on. My mom would always make this salad, still does to this day, and it’s such a popular Greek dish that’s super simple to make (but tastes like a ton of effort went into it). This salad only has 5 ingredients - CAN YOU BELIEVE IT! It takes under 10 minutes to put together. All you have to do is chop, toss and combine with a lemon olive oil “dressing”. This seriously has got to be one of the easiest (but flavorful) salads you can make! SHE’S easy, quick, fresh and something you need to try IMMEDIATELY! Here’s all you need! 1 ½ heads romaine lettuce 5 sprigs green onion 1/3 cup fresh dill chopped 2 tbsp. olive oil 2 tbsp. vinegar (or substitute with lemon juice) 1 tsp. salt ½ tsp. black pepper Instructions: 1. Wash the romaine lettuce and chop to your desired size. 2. Transfer to a large bowl. 3. Thinly slice the green onion and add it to the bowl along with the freshly chopped dill. 4. Add the olive oil, vinegar, salt, and black pepper. 5. Mix to combine, and adjust seasoning to taste. 6. Serve this delicious salad as a side dish to any meal!!

Arayes (Meat-Stuffed Crispy Pita): Chicken & Feta edition! You’ve never had anything this juicy, quick and easy! So we’re bring it back for round 2, but this time with a non-traditional chicken and feta filling. Arayes are a classic Lebanese & Syrian street food. (There’s also an Egyptian version called Hawawshi.) They’re fried or grilled meat-stuffed pita that is popular in Middle Eastern cuisine. They are usually stuffed with minced meat like beef or lamb, along with a combination of aromatic seasonings and spices. Think of them as a better, Middle Eastern version of a pizza pocket. These are so tasty and your whole family will love them (even the picky eaters). They’re incredible easy to make, perfect for a quick dinner and a party friendly! Arayes are usually served with a creamy Tahini or Yoghurt Sauce. Make the meat filling: combine the feta, ground chicken, grated onion, grated garlic, salt, pepper, fresh mint, fresh basil and minced jalapeno in a bowl and mix well with your hands or a spatula to combine.� 2. Divide the meat filling into 6 portions. Shape each portion into a semi-circle that’s just a bit smaller than half of a pita. Comment ‘RECIPE’ to get the recipe sent straight to your DMs or BOOKMARK the recipe below 👇 High Protein Quinoa + Edamame Salad with a Homemade Greek Inspired Lemon Mango Dressing (serves 4) Salad: 2 cups cooked quinoa (about 2/3 cup uncooked) 14 oz can cannellini beans, drained and rinsed 1 1/2 cup shelled edamame 1/2 cup chopped salted cashews 1 cup wonton crisps 1/3 cup chopped fresh basil 2 cups chopped spinach 2 cups diced cucumber 1 red pepper, diced Dressing: 1/4 cup olive oil 1 mango, pitted and chopped 1 1/2 tsp salt 1/2 tsp pepper 1 large garlic clove 1 large basil leaf juice from one lemon 1 tbsp red wine vinegar Cook the quinoa according to package directions and set aside.
