A great rise takes time, literally. These cinnamon rolls proofed on the counter overnight.

I always heat my milk to at minimum 90° and add softened butter one tbsp at a time during the mixing portion.

I am excited to share the knowledge I've learned over the past year with a friend this morning. The cinnamon rolls will go fabulous with coffee 😍

Do yourselves a favor and switch out water in your recipe for whey 😍😍😍😍

Wow!! I was expecting a complete flop on this loaf. I used fresh milled flour and the leftover whey from the mozzarella I made last week!! SO springy!!!

**recipe from Little Pearl Breads & Bakes**

84g active starter
306g water (whey in my case)
340g bread flour
60g milled flour (or whole wheat)
6g salt

Absolutely gorgeous loaves today!!

Sourdough is such a labor of love.

This took over 48 hours. I took my starter out of the refrigerator, fed it a 1:2:2 ratio, discarded back into my discard jar, refed another 1:2:2 ratio and by the next morning it was beautifully bubbly!

I then mixed my dough at 6am and did stretch and folds for 3.5 hours. I let it finish bulk fermenting until 2:30pm and then pre-shaped, bench rest, then final shaped before putting into the fridge.

Preheated the oven with Dutch ovens at 450, baked 6 mins, scored, another 15 mins lid on. Took lid off for the last 15 mins still at 450 and now to cool for an hour at 6:05pm.

I don't have industrial sized equipment to do big batches, the most I can get done in a day is a maximum of 5 to 6 loaves so doing mass orders has proven to be complicated.

I have people asking if I am still taking orders. I am, but limited. I don't advertise as much and just bake when I am asked.

I love this!! But I am not a restaurant or have a team to help so I backed off for now. I am thrilled that I recently got a double oven and can now do a variety of bakes at once so that will help tremendously!!
