Creamy Chicken and Mushroom Macaroni
Ingredients:
1 lb (450g) macaroni pasta
1 lb (450g) chicken breast, diced
1 cup mushrooms, sliced (button or cremini work well)
1 small onion, finely diced
3 cloves garlic, minced
2 cups heavy cream
1 cup chicken broth
1 cup shredded Parmesan or Gruyère cheese
1 tbsp olive oil
1 tbsp butter
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the Pasta: Boil macaroni in salted water according to package instructions until al dente. Drain and set aside.
Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the diced chicken with salt and pepper, then cook until golden and no longer pink in the center, about 5-7 minutes. Remove from the skillet and set aside.
Sauté the Mushrooms: In the same skillet, add butter and sauté the mushrooms and onions until they soften and the mushrooms turn golden brown, about 4-5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
Make the Creamy Sauce: Reduce heat to medium, then pour in the chicken broth and heavy cream, stirring to combine. Let the sauce simmer for 3-4 minutes, thickening slightly.
Combine Everything: Add the cooked chicken back to the skillet along with the drained macaroni. Stir in the shredded cheese until it melts and the sauce coats the pasta evenly. Season with additional salt and pepper if needed.
Serve: Garnish with fresh parsley and serve warm.
Variations:
Vegetable Additions: Add spinach, bell peppers, or peas for a pop of color and added nutrition.
Herbs: Add a touch of thyme or rosemary to the sauce for an aromatic twist.
Cheese: Substitute with mozzarella for a more gooey texture.
