Italian Beef Stew with Potatoes
A rich, slow-simmered Italian beef stew with tender chunks of beef, potatoes, carrots, peas, tomatoes, and aromatic herbs. Perfect for a warm family meal. 🇮🇹🥘
Ingredients
* 2 lb (900 g) beef chuck, cut into chunks
* 2 tbsp olive oil
* 1 large onion, chopped
* 3 cloves garlic, minced
* 3 carrots, sliced
* 4 medium potatoes, cut into chunks
* 1 cup green peas
* 2 tbsp tomato paste
* 1 can (14 oz / 400 g) crushed tomatoes
* 3 cups beef broth
* ½ cup dry red wine, optional
* 1 tsp dried rosemary
* 1 tsp dried thyme
* 1 tsp dried oregano
* 1 bay leaf
* Salt and black pepper, to taste
* Fresh parsley, chopped
Instructions
1. Season the beef with salt and pepper.
2. Heat olive oil in a large pot over medium-high heat. Brown the beef in batches, then transfer to a plate.
3. Add onion and carrots to the same pot and cook for about 5 minutes.
4. Stir in the garlic and tomato paste and cook for another minute.
5. Return the beef to the pot. Add crushed tomatoes, beef broth, wine if using, rosemary, thyme, oregano, and bay leaf.
6. Bring to a gentle boil, then cover and simmer on low for about 1½ hours.
7. Add the potatoes and continue cooking for 30–40 minutes, until the beef and potatoes are fork-tender.
8. Stir in the peas during the last 5–10 minutes.
9. Adjust salt and pepper, remove the bay leaf, and garnish with fresh parsley.
Serve hot with crusty Italian bread for a hearty, comforting meal. ❤️
