A BBQ joint in our area makes the best jumbo molasses cookies all year long. They are slightly crisp on the outside, but stay soft and chewy on the inside for days. They are also sugar crusted, but the sugar is soft instead of gritty. This is a copycat recipe of their famous cookie. The trick for the sugar coating is to use a mixture of granulated sugar and powdered sugar. Lightly sprinkle it on top of the cookie and as they bake the sugar puffs up and creates a snowy sugar coating.
Bakery Molasses Cookies
▢ ½ cup shortening
▢ ½ cup salted butter
▢ ¾ cup brown sugar
▢ ¾ cup granulated sugar
▢ 1 large egg
▢ ⅓ cup molasses
▢ 1 teaspoon vanilla extract
▢ 2 teaspoons ground cinnamon
▢ 1 ½ teaspoons ground ginger
▢ ½ teaspoon ground cloves
▢ ½ teaspoon salt
▢ 2 teaspoons baking soda

Had the Mormon missionaries over for dinner last night. I made homemade Cafe Rio and chocolate chip cookies. I snapped a picture of the missionaries and texted it to their mommas. I have two returned missionary sons and always appreciated when people were kind to them. ❤️
This bakery-style recipe makes thick and fudgy cookies without needing to chill the dough. You don’t have to ever worry about these cookies spreading too much. They turn out perfect every time! 🍪
