As per request, heres my miso pho recipe 🍜! I was craving miso soup and veggie pho so I combined them into one & it was DELICIOUS 😊.
Ingredients:
For the Soup Base…
• Olive oil
• 1 small onion, diced
• 1 shallot, diced
• 2–3 cloves garlic, minced
• 1 tsp ginger paste
• 2 cups Vegetable broth
• 1 cup Water
• 1 tsp Soy sauce
• 1 tsp Mirin
• 1 bouillon cube (or sprinkle)
• Seaweed (cut or flaked)
• 2 tbsp Miso paste
For the Add-Ins & Toppings…
All are optional, choose whatever you like bit I used
• Carrots, sliced
• Mushrooms, sliced
• Tofu, diced into cubes
• Rice noodles
• Bok choy
• Cilantro
• Bean sprouts
• Hoisin sauce or Sriracha
Instructions:
1. Dice onion, shallot, and garlic.
2. Add olive oil to a pan, and when the oil is hot, sauté the onion, shallot, garlic, and ginger paste.
3. Once sautéed, add vegetable broth and water.
4. In a separate pan, while that’s boiling, sauté vegetable toppings — I used carrots and mushrooms.
5. Add soy sauce and mirin, then pull off heat once simmering.
6. While that’s cooking, dice tofu into cubes, then add to the broth pot.
7. Sprinkle in bouillon and seaweed.
8. Add rice noodles and let cook (about 2 minutes).
9. After 5 minutes, add bok choy to the top and steam for 2–3 minutes.
10. Lastly, add in miso paste. Make sure to strain or stir it well to avoid clumps in the soup.
11. Add toppings such as cilantro, bean sprouts, hoisin, and sriracha — then enjoy!
