Excuse my wrinkled tablecloth... I wasn't feeling it! lol

However everything was so yummy! I thought I would share a few recipes. A couple are from other sources and a couple are mine.

Menu:

This is Low Sugar jam. There is only two cups of sugar to all 10 jars. Small Jars $6 Lrg $14

We are headed out to pick some fresh blueberries and blackberries for the farm stand and then I’ll start working on the other jams. Blackberry, then peaches, and then plum. I will update this page as each becomes available.

We are fully stocked today in our honey, Smoot’s Goose and we have a bag or two of blueberries and blackberries in the fridge. Currently sold out of Free Range Eggs.

Good Morning!

Barry and I have been out doing as my dad would always say “farm type stuff”. Weed-eating, tending the new fruit orchard, planting tomato plants, picking blackberries and blueberries, getting ready to work on extracting more honey. I’m going to work on canning blackberry jam and make some more creamed honey. Also make a run to Dickey Farms for some fresh strawberries and peaches, plus some ice cream and make another stop at Silo Springs Ranch in Culloden to pick up some meats and stuff.🥰❤️

Pictures: I don’t recall in the 41 years we have been here this many figs on the tree. Yes, I’ll be making fig preserves soon too!

The farm stand is open! We have a dozen fresh eggs, several quart bags each of blueberries and blackberries, honey, low sugar blueberry jam and Smoot’s Goose!

I’m doing a little R&D this afternoon. I’m making Creamed Honey for the farm stand! It will take about 2 weeks before it’s finished. I’ll post again when it goes into the farm stand.

It’s crystalized and whipped honey and then add runny honey and mixed in. Once you allow it to sit for a couple of weeks the runny honey takes on the consistency of the whipped crystalized honey. So it stays creamy and spreadable.

OMGHEE!! I was please with my blueberry jam!

This is a new/different process for me. I puréed some of the berries and then I added whole berries while it was cooking to get them to just burst open but still be big chunks. I used citrus pectin and made it low sugar. This is what was left after ladling into jars. This wasn’t processed and it set up nicely.

I used 2.5 cups of sugar for 2 pints and 5 half pints. I might try even lower sugar next time. I didn’t want to veer off the original recipe too much at first.

I’ll let the jars cool over night, figure a price, label them and then get them in the farm stand tomorrow!

But first I’m off to bottle more honey!

One thing is for sure, I’ll be spending some quality time with this ol’ girl. This is my 1952 Chambers Range with its original Freedom Red Enamel. I have had the range for about 14 years now and I still enjoy it!

You wanna guess what I’m fixin’ to do?

I gathered up, washed a bunch of jars and have them ready to sterilize.
