🍪🍦 Cookie Ice Cream Sandwich Recipe
🧾 Ingredients
For the Cookies (makes ~12 sandwiches):
2 ¼ cups all-purpose flour
½ tsp baking soda
½ tsp salt
¾ cup unsalted butter, melted and cooled
1 cup brown sugar
½ cup granulated sugar
1 large egg + 1 egg yolk
1 tbsp vanilla extract
1 ½ cups chocolate chips (or any mix-ins like M&Ms, chopped nuts)
For the Ice Cream:
1.5 to 2 quarts of your favorite flavor (vanilla, chocolate chip, cookie dough, etc.)
Let it soften slightly for easy scooping/spreading
👩🍳 Instructions
1. Bake the Cookies
Preheat oven to 350°F (175°C). Line baking sheets with parchment.
Whisk flour, baking soda, and salt in a bowl.
In another bowl, mix melted butter, sugars, eggs, and vanilla until smooth.
Stir in dry ingredients until just combined, then fold in chocolate chips.
Scoop ~2 tbsp dough per cookie and space apart. Flatten slightly.
Bake 10–12 minutes until golden at the edges but soft in the center.
Cool completely on a wire rack.
💡 Make cookies slightly underbaked for a softer bite when frozen.
2. Assemble the Sandwiches
Flip one cookie upside down, scoop ~½ cup softened ice cream onto the flat side.
Top with another cookie and gently press to spread the ice cream evenly.
Optionally, roll the edges in:
Mini chocolate chips
Sprinkles
Crushed nuts
Cookie crumbs
3. Freeze to Set
Place assembled sandwiches on a tray lined with parchment paper.
Freeze at least 2 hours until firm.
Wrap individually in plastic wrap or store in an airtight container.
📝 Tips & Variations
Gluten-Free: Use 1:1 gluten-free flour blend and GF ice cream.

Peanut butter cookies + chocolate ice cream
Double chocolate cookies + mint chip ice cream
