There is perhaps no dish in Southwest France more iconic, cherished, and controversial than the classic cassoulet. Originally the food of peasants, this dish was a simple assemblage of what ingredients were cheaply and readily available. Generally, this looked something like white beans with pork, sausage, duck confit, gizzards, cooked together for an extended length of time, making the most of the ingredients readily available and on hand.
Helene’s Cassoulet has, in a very short time, made itself known as the best cassoulet in the Treasure Valley, and for good reason. Slow cooked in a densely flavorful chicken bone broth with a slew of fresh herbs, white wine, Italian sausage, pancetta, roasted garlic, white beans, and eventually, a duck confit – this is a dish that keeps everyone coming back for more.
