Day 3 of the Cookie Challenge

Cardamom Chocolate Chip Cookies 🍪

Pools of chocolate with desi spices intergrated into the dough like cardamom and jaggery, these cookies are too good.

INGREDIENTS:

-1 1/4 Cup of Flour
-1 Teaspoon of Cardamom
-1/2 Teaspoon of Baking Soda
-1/2 Cup of Sugar
-3/4 Cup of Jaggery or Brown Sugar
-1 Egg
-1 Teaspoon of Vanilla
-8 oz of your choice of chocolate (I’m using dark)

INSTRUCTIONS:

1. In a small medium-low pan, add the stick and melt down till it’s a deep golden brown, set aside, and cool.
2. In a separate bowl add the sugar, brown sugar, and butter and combine.
3. Add the egg and vanilla and whisk in till its a pale yellow.
4. Sift in flour, baking soda, and cardamom and combine.
5. Chop up your chocolate of choice and fold into the batter.
6. Scoop out either small or large sized cookies and add it on the cookie tray,
7. Let it refrigerate for about 20 minutes to 1 hour.
8. Pre-heat oven at 350 degrees.
9. Bake the small cookies for 8-10 minutes
10. Bake large cookies at 15 minutes.s
11. Let it cool

Day 2 of the Cookie Challenge ✨

Cranberry Orange Thumbprint Cookies 🧡

A delicious citrus cookie are topped off with a holiday inspired jam, these cranberry orange thumbprint cookies are soft and delectable. With orange zest within the shortbread and the juice in the jam, these buttery cookies are quick to make with a short chilling time.

INGREDIENTS:
SHORTBREAD COOKIE
-1/2 cup Softened Butter
- 3 Tablespoons of Sugar
-3 Tablespoons of Brown Sugar
-1 Egg Yolk
-1 Teaspoon of Vanilla Extract
-1 cup and 2 tablespoons of Flour & Salt
-1 tsp Cornstarch
-Zest of one orange
CRANBERRY ORANGE JAM
-1/2 Can of Canned Cranberry Sauce
-1 Teaspoon of Orange Zest
-1/2 Juice of an Orange
INSTRUCTIONS:
1. Mix the softened butter and sugar till it's pale yellow.
2. Add the egg yolk and vanilla extract and combine.
3. Combine the flour, salt, and cornstarch within the wet mixture.
4. Zest in one orange and combine the dough into a ball.
5. Chill dough for 20 minutes.
6. In a small pot, on medium-low flame add the cranberry sauce, orange zest, and orange juice.
7. Let the jam mixture simmer for about 3-4 minutes.
8. Set aside for the jam to cool.
9. Pre-heat oven to 350 degrees.
10. Scoop out each cookie and roll till its round and place of the cookie tray.
11. Take a tablespoon and indent the center of the cookie.
12. Add a teaspoon of jam into the center of each cookie.
13. Bake for 8-10 minutes and let it cool.

🎄Classic Gingerbread Cookies

Of course I had to start off with a classic gingerbread cookie as Day 1 of the 7 day cookie challenge. This is the Christmas cookie & this recipe is from . It’s the perfect blend of warm spices & sweetness.

INGREDIENTS:
* 2 1/4 cups (280g) all-purpose flour, spooned and leveled
* 1 tsp baking powder
* 2 heaping tsp ground ginger
* 1 tsp cinnamon
* Pinch of salt
* 1/4 cup (90g) unsulfured molasses
* 1 large egg
* 1/2 cup (110g) unsalted butter, room temperature
* 3/4 cup (150g) light brown sugar, packed

INSTRUCTIONS:
1. Mix together the softened butter and brown sugar till it’s light brown.
2. Add the egg and molasses and mix it in till it’s a dark brown color.
3. In a separate bowl, combine the flour, baking powder, salt, ground ginger, and cinnamon.
4. Add the flour mixture into the butter mixture and combine till it comes together.
5. Wrap up the cookie dough and refrigerate for a minimum of 1 hour.
6. Pre-heat oven to 350 degrees.
7. Sprinkle flour onto a flat surface and on to the rolling pin.
8. Divide the dough into half, you can freeze the other half.
9. Add some flour onto the dough and roll out the dough till it’s even surface.
10. Begin to cut out the cookies and add to your baking tray with parchment paper.
11. **optional** sprinkle sugar on top of the cookies
12. Bake the cookies for about 8 minutes and let it cool.

Easy Blackened Chicken Tenders!

Super quick with a great spice blend, this recipe only takes a few minutes to make!

Ingredients:
•5-6 pieces of chicken tenders
•3 tablespoons of any oil
•1 tsp of salt
•1 tsp Italian seasoning or oregano
•1/2 tsp of black pepper
•1/2 tsp of cayenne pepper
•1/2 tsp of Kashmiri chili powder or chili powder
•1/2 tsp of garlic powder
•1/2 tsp of onion powder

Instructions:
1. Combine all the spices in a bowl set aside
2. Add the chicken tenders in a separate bowl and add 3 tablespoons of oil
3. Add the seasoning blend on the chicken & marinade for a minimum of 20-30 minutes
4. Set a pan on medium high heat and fry each side of the chicken till blackened about 4-5 minutes per side.
5. Pair the chicken with your favorite sauce & enjoy!

Ingredients:

Shortbread Crust:

* 2 cups all-purpose flour, spooned and leveled (240g)
* ⅓ cup granulated white sugar
* ½ teaspoon salt
* ⅞ cup unsalted butter, (cold)

Chocolate Pecan filling

•¾ cup light brown sugar, packed
•2 oz chocolate
•⅓ cup maple syrup 
•2 tablespoon heavy cream
•½ teaspoon salt
•1 tsp of vanilla extract
•½ cup unsalted butter 
•3 cups pecan nuts, roughly chopped

1. Pre-heat oven to 350degrees
2. Combine all the shortbread crust ingredients and pulse till the dough is combined
3. Spread out evenly in a 9x13 baking dish
4. Bake the crust for 20 mins
5. In a medium-low pot add the butter, sugar, salt, vanilla, maple syrup, and heavy cream and combine.
6. Let it bubble for about 5-7 minutes and take it off the flame.
7. Add in the chocolate and stir
8. Add in the pecans and set aside
9. Once the shortbread is done, set it aside to let it cool.
10. Once cooled add the chocolate pecan mix
11. Bake for an additional 20 minutes
12. Once baked let it cook and slice!

Za’atar baked cauliflower is drizzled with tahini and pomegranate molasses to combine both tart & savory for this delicious combo.

Ingredients:
•1/2 head of cauliflower
•1/4 cup of oil
•2 teaspoons of Zatar
•1/2 teaspoon of salt
•1/2 teaspoon of sumac
•1/2 teaspoon of black pepper
•1 tablespoon of tahini (recipe will be dropping soon)
•2 teaspoon of pomegranate molasses
•1 tablespoon of pomegranate seeds
•parsley/cilantro to garnish

Instructions:
1. Preheat oven to 400 degrees
2. Separate the cauliflower florets, rinse, and dry.
3. In a separate bowl, combine the oil and seasonings.
4. Drizzle the spice oil on top of the cauliflower.
5. Bake for 20-25 minutes till tender.
6. Plate the cauliflower, drizzle tahini, molasses, garnish with parsley and seeds.

Truffle Sweet potato toasts with spiced chickpeas and topped with herb feta.

A vegetarians dream ✨

Recipe:
1 sweet potato (sliced length wise into 3-4 pieces)
1 tablespoon of truffle oil
1 minced garlic clove
1/2 tsp of black pepper
1/2 tsp of paprika
1 can of drained chickpeas
1 tablespoon of ground cumin
1/2 block of feta cheese
1 teaspoon of herbs of any kind

Instructions:
1. Slice potatoes
2. Mix oil, garlic, and seasonings
3. Brush on each side of potato
4. Bake potatoes at 350 for 20-30mins
5. Sauté chickpeas with cumin (add other flavors if you want)
6. Chop feta cheese & mix with herbs
7. Top potatoes with chickpeas and feta
8. Garnish with parsley
