Currently counting down til soup season. 😮‍💨🤌🏾 You?! Whelp, this Creamy White Chicken + Rice Soup feels like a warm, comforting hug from grandma! 🫶🏾

YOUR GROCERY LIST:

🍜Extra virgin olive oil. For sauteeing, you could also use avocado or grapeseed oil. Love California Olive Ranch
🍜Shredded Chicken. See my easy shredded chicken recipe!
🍜Red onion. You can also use white or yellow onion.
🍜Garlic cloves. You’ll mince your garlic for a good sauté.
🍜Celery stalks + carrots. These vegetables create the delicious, flavorful, aromatic base of the soup.
🍜Herbs + seasonings. Fresh thyme sprigs, bay leaf, sea salt, black pepper, dried oregano, dried basil, dried parsley + garlic powder.
🍜Chicken or vegetable stock. Use store-bought low-sodium broth or make your own! For added nutrition, add in half the amount in bone broth. Always Kettle & Fire for bone broth.
🍜Heavy cream. I recommend organic–always! Of course, for a dairy-free option, just use full-fat coconut cream/milk. Love Organic Valley
🍜White cooking wine. You can omit + sub with stock.
🍜Cooked Basmati Rice. You can also use 1 cup of dry long grain rice; be sure to add an extra cup of stock if you do.
🍜Parmesan + Mozzarella cheese. I love to freshly grate my cheese, however, you can use your favorite shredded brand—quality does matter! Always BelGioioso Cheese For a dairy-free option, So Delicious Dairy-Free or Violife cheese shreds taste great.

There’s just something about Southern Peach Cobbler that I can’t shake. 🤌🏾🤩🔥🍑 Bottom crust, top crust, or both——I’m IN! 🫶🏾

YOUR GROCERY LIST:

🍑Sliced peaches. You can use fresh or frozen or canned peaches, which means this is a year-round recipe! If you use frozen fruit, dust the peach slices in a few tablespoons of flour before adding them to the recipe. This helps absorb some of the excess moisture on the frozen fruit. For the canned peaches, you’ll need to drain them thoroughly and pat dry to remove all excess moisture + juices.
🍑Brown sugar. Ensure that it’s organic for healthiest option.
🍑Cane sugar. I use organic sugar. Feel free to substitute with organic brown sugar or coconut sugar.
🍑Cornstarch mixture. This is where you’ll mix the cornstarch and WARM water together for a “milky-like” consistency. It works as a great thickener for the filling since there is moisture involved during the baking process. You can also use all-purpose flour, tapioca flour, arrowroot, etc instead.
🍑Dessert Lover Blend. For more warming flavors, burst of comfort, and it amplifies the peach notes in this recipe! You can purchase my Dessert Lover Blend or create your own similar homemade version via the notes in the recipe.
🍑Vanilla extract. The pure vanilla is the best flavor.
🍑Unsalted butter. I like to bake with unsalted butter, however, you can substitute with salted butter and omit the additional salt.
🍑Lemon juice. I love to use freshly-squeezed lemon juice. This adds acidity to the cobbler which adds great structure and texture as well as a nice tartness that compliments the peaches.
