Cranberry, stuffing, and turkey are true Thanksgiving Day staples. But, what happens when you mix all three ingredients together in a bite-sized meatball? A flavor explosion that is good enough to be enjoyed year-round!

Ingredients:
• 1 pound ground turkey
• ½ onion, diced
• 1 clove garlic, minced
• ⅓ cup dried cranberries, diced
• 1 tablespoon fresh sage, diced
• 1 egg, beaten
• 1 cup breadcrumbs Salt and pepper, to taste
• 1 can gravy, to serve

Instructions:
1. Preheat the oven to 375°F.
2. In a bowl, combine all of the ingredients besides the gravy. Using your hands, fold until it’s thoroughly mixed.
3. Roll the meat mixture into small balls, and place on a parchment lined baking sheet.
4. Bake for 20 minutes, and serve immediately.

This creative stuffing is sure to please your Thanksgiving crowd. Made with focaccia bread and loaded with broccoli rabe, roasted red peppers, Parmesan, and Italian sausage.

Ingredients:
• 6 tablespoons butter
• ½ pound Italian sausage, casing removed, crumbled
• 4 garlic cloves, peeled and minced
• ½ cup yellow onion, peeled and minced
• ½ cup celery, minced
• 1 cup broccoli rabe, chopped
• ¾ cup roasted red peppers, chopped
• 6 cups cubed and toasted focaccia bread
• 1 tablespoon Italian seasoning
• 1 teaspoon salt
• 3 cups chicken/turkey broth
• ½ cup Parmesan, grated

Instructions:
1. Preheat oven to 350°F.
2. In a large saute pan, melt butter over medium-high heat. Saute sausage, garlic, onion, and celery together until sausage is cooked, about 4 minutes, stirring frequently.
3. Stir in broccoli rabe, peppers, and focaccia until combined. Season with Italian seasoning and salt, and pour in broth. Spoon mixture into a 13″ x 9″ casserole dish.
4. Cover casserole with foil, and bake for 20 minutes. Remove foil, increase temperature to 400°F, and bake for an additional 10 minutes or until top is golden brown. Let rest for 10 minutes and top with grated Parmesan before serving.
