My Alfredo sauce won the dormitory cooking competition on my floor when I switched majors. Secret ingredient: I used the extra garlic I would ask for when I ordered garlic knots on 1st Ave and 9th at Village Pizza and Kebabs. (Fresh garlic, fresh parsley, parm and butter)

I also finally understood how to make a roux. That night one of the competitors explained to me how to make the sauce thicker without making flour lumps. The method of making a roux was lost on me from reading the instructions when I was 10. I’m a visual learner.

The ratio of ingredients was very easy to remember. I started making Alfredo sauce when I was 10 years old. I really liked Knorr’s fettuccine alfredo packets and I was curious as to how it was made from scratch. My mom whipped out her old Betty Crocker cookbook, and I learned how to make a basic recipe.

1 stick of butter
2 Tbsp of Flour
1 pint or 2 cups half and half
1/2 cup grated Parmesan cheese
1 minced garlic or 1 tsp garlic in the raw sauce
Salt and pepper
Garnish with parsley
1 lb fettuccine, spaghetti, linguine or angel hair pasta
Serve with veggies like green beans and my everyday chicken breasts.

My mom made sure I got some roasted breadfruit from the last person she knew returning from Jamaica. No better way to finish this last stock that’s been in my freezer which I got from my mom than to make it fancy and indulge.

I like truffle. I drizzled truffle infused olive oil with some garlic sauce, parmesan, and fresh thyme. Adding avocado was like an elevated avocado toast. The addition of protein in the form of chicken was a nice touch.

Love seeing our trucks on the road especially since we don’t have many of them. I become like a giddy child. That’s our driver, German. He’s reliable, trustworthy and hard working.

Cape Cod Cranberry Chutney: The Thanksgiving MVP you didn’t know you needed.

Tangy, sweet, warm spices… and honestly? You’ll never buy canned cranberries again.

I grew up watching my family turn simple ingredients into magic, but for some reason cranberry sauce was always canned and jellied. After working for Boston Market while in school, I only wanted a whole cranberry sauce. This recipe is effortless, bold, and made with love. Perfect on turkey, leftovers, sandwiches, and … by the spoonful.
• 30 minutes
• Minimal ingredients

Ingredients:
1 Lb Fresh Cranberries (4 cups)
1 Large Tart Apple, chopped (2 cups)
1/2 Cup Honey
1/2 Cup Sugar
1 Cup Water
2 tsp Cinnamon
1 tsp Ground Ginger
1/2 tsp Ground Cloves

Stir ingredients together. Bring to a boil. Stir. Reduce heat. Cover 20 mins. Stir. Uncover and simmer until thickens another 10-15 mins. Enjoy warm or chilled.

If you make this, tag me! I want to see your plates! This can be made ahead of time. Refrigerate it and warm it up before serving or serve it cold.

And yes… make extra for your leftover sandwiches and pizzas for Friendsgiving. Trust me on this.

Stars aligned, is it a sign?!
In speaker challenge yesterday, l’m logging on and off juggling having my son with me in Denver for the tradeshow, working and tapping in for inspiration knowing I’ll be doing a 15 second pitch to today. I pitched last year and wanted to make sure I would nail it this year. She had introduced guest speakers on her zoom call and one of them I got to meet in person today! In a very surreal moment, I notice this petite woman with amazing arms, then notice her tattoos and beautiful face and realize it’s Jen’s friend, !
On a side note, several people came by our booth after my pitch and said they had to try our products. We got the same feedback as last year, we were told we have the best food at the show!
My son was a great helper setting up the patties for the oven and making sure they were lined up on the sample table. He got to have a little fun, too.
