2 oz | 60 ml Cachaça
½ oz | 15 ml (cut into quarters)
2 tsp Fine Sugar
Sugared Lime Wedge
(Garnish))

Instructions: Muddle lime wedges and sugar to release the oils and juice from the lime wedges. Then add Cachaça (or a cane sugar rum if you can’t find it). [Stir or] Shake then dirty dump into a rocks glass.
[Optional] Garnish with sugared lime wedge and brûlée the sugar.

1 oz | 30 ml Mezcal Don Ramón
¾ oz | 22.5 ml Campari
¾ oz | 22.5 ml Fresh Lemon Juice
½ oz | 15 ml Honey Syrup
1½ oz | 45 ml Satsuma Mandarin Orange Juice
3 Dashes Orange Bitters
Fresh Orange Wedge (Garnish)

Instructions: In a Collins glass, pour Campari over ice and set aside. Combine all other ingredients except garnish in a shaking tin with ice. Shake vigorously until the juice is frothy. Strain, pour cocktail into the Collins glass over the Campari. Add a straw and stir lightly to incorporate. Garnish with orange wedge and satsuma leaf (optional). Serve and enjoy!

Sometimes we forget to take advantage of the fact that we live in a place where people vacation. While it’s unbearably hot here in Charleston, afternoons on the water are another story.

¼ oz | 7.5 ml SC Pecan-infused Agave Syrup

Citrus Smoke

Instructions: Combine Tequila and all other ingredients in a mixing glass with ice. Stir for 20 seconds. Strain and pour into a chilled coupe. Finish with citrus smoke infusion. Serve and Enjoy!

1½ oz | 45 ml White Rum
½ oz | 15 ml Black Strap Rum
¾ oz | 22.5 ml Demerara Simple Syrup
¾ oz | 22.5 ml Fresh Lime Juice
Soda Water
Fresh Mint

Instructions: Combine 3 mint leaves, simple syrup to a shaking tin a muddle lightly. Add the white rum, lime juice and ice to the tin. Shake, strain and pour the cocktail over crushed or pebble ice. Top with soda water, lightly stir. Float Goslings over top. Garnish with a bunch of fresh mint. Serve and enjoy!

Instructions: Combine all ingredients into a shaking tin. Shake and fine strain over pebble ice. I was going to serve this in a Collins glass but there was a perfectly good can sitting there. Garnish with a bouquet of mint and add a straw. Cheers y’all
