Tonight I made pinecone cheesecake! I’ve shown a pinecone jam a couple of times, but I realized that I’ve never made anything with it! The flavor pears really well with cheese and with chocolate so I figured what would be better than a chocolate covered pinecone cheesecake!

I added some edible glitter to a pinecone silicone mold before adding in the chocolate. I used the basque cheesecake from whole foods for the filling! I blended it a little bit before adding it into the mold to get all of that caramelized cheesecake flavor!

I was pretty nervous to remove this from the mold because I added a thin layer of chocolate before the cheesecake but to my relief it came out of the mold perfectly. For the final details I placed the cheesecake on a little ginger snap cookie then garnished with a marigold and rosemary! Pinecone jam will always have a special place in my heart 🙈
