Greek Chicken Bowls
1. Roast Potatoes�Halve golden potatoes, toss with olive oil, salt, and lemon pepper. Roast at 425°F for 30 minutes, flipping once, until crispy.
2. Roast Chicken�Season chicken thighs with olive oil, salt, pepper, paprika, and garlic powder. Roast at 425°F for 30–35 minutes, until cooked through and crispy.
3. Make Salad�Combine arugula, cucumbers, peppers, olives, and feta. Toss with lemon juice, olive oil, salt, pepper, and oregano.
4. Make Tzatziki�Mix Greek yogurt, grated & strained cucumber, parsley, garlic powder, salt, a drizzle of olive oil, and a little lemon juice.
5. Assemble�Top salad with chicken, potatoes, pickled red onions, and drizzle with tzatziki.
